Test Video

It's nothing fancy...nothing deep...but I made this video last night as a test. It's possible that there may be more to come in the days ahead.

Happy First Day of Spring!

Despite the madness, it's apparent that life, does, indeed, go on around us. Won't you join me as I take a tour of our yard to see what's happening there this afternoon? 🌷

Pink Hyacinth Blooming in Our Yard

"...old things are passed away; behold, all things are
become new..." (2 Corinthians 5:17)

Before we go outside, let's take a peek at my husband's tomato plants. He planted them on March 5th. At this point, the plants are about two-inches tall and have already put on their second set of leaves.

With them the hope of a successful garden year looms large on our horizon.

Dandelion

A dandelion grows just outside the backdoor. I will look for dandelion leaves while we're out and about. They pack a lot of nutrition and will come in handy used as greens and spring salads.

Grape Hyacinth and Wild Onion

Grape hyacinths grow midst henbit and wild onions, both of which are edible. I will have to do some research to find out how each are used and do something with them.

Henbit

Henbit and Wild Crocus

The last of this year's crocus bloom amidst a backdrop of henbit. I see one last yellow crocus pushing itself up among the last of the purples.

Daffodils bloom along the frontage and their pretty yellow faces make me smile.

Daffodil

The lilac leaves grow a little larger each day and it won't belong before they bloom.

Lilac

I'm not sure what the name of the bushes behind the birdbath are, but they grow along the south fence and are leafing out quite nicely.

In addition to all these lovelies there are tiny bluets, spring beauties, and a whole host of native spring flowers and other things blooming here, there, and yonder around the yard.

Birds are busy building their nests and new life is springing forth on every front! 🌷

I trust that you and yours are well and I hope that you can get outside and enjoy this beautiful First Day of Spring 2020!

What's blooming in your yard???

Until next time...

Roasting Pumpkins in March

As part of putting into practice some of the measures that President Trump has asked Americans to practice during these interesting times in which we live, I am doing my part today by staying home, going through the house to see what's on hand, and making a list of what we need should we happen to find it next time we're out...which may not be for awhile.

I know I need to focus on fresh foods first, so that's what I'm starting with. I just happened to have two small pumpkins left over from last October.

One is orange; the other is white. Both have been sitting on a shelf in the kitchen all winter long and both are still good. I decided to do something with them first.

I had never seen the inside of a white pumpkin before. The
flesh is beautiful and looks similar to fresh coconut.

I decided to roast the pumpkins, so they are in the oven now. When they are done, and after they have cooled, I will puree the flesh and freeze it to be used at a later date in muffins, breads, etc.

I also had a 3-pound bag of organic sweet potatoes that I had picked up last time we were out. I decided to throw them in the oven and roast them with the pumpkins. I will use them throughout the week as side dishes (baked or mashed), or I may turn them into a sweet potato pie. Either way, they will not go to waste.

Organic Sweet Potatoes, 3 lb Bag

I know it's a little odd and definitely out of season, but, if I still have pumpkins sitting around from last fall, some of you might, too, and you might be looking for a way to use them up, just like I am.

Here are the instructions on how to roast and puree a pumpkin:

After cutting the pumpkin in half and removing the seeds, place on a large baking pan (skin side up; cut side down). Roast in a 375-degree oven for about an hour and fifteen minutes or until fork tender throughout. Scoop out the flesh from the skin and place in a food processor to puree. Once pureed, use fresh or allow to cool before placing in freezer bags.

What measures are you and your family taking during these difficult times? What do you have in your house? And how are you using it?

Until next time...

Happy St. Patrick's Day!

WARNING!!! This post is full o' blarney (as is the one writing it). To be fully appreciated, this post must be read in its entirety with a full Irish brogue. Otherwise it might lose some of it's flavor.

Are ye ready?

🍀🍀🍀🍀🍀🍀🍀🍀🍀🍀🍀🍀🍀🍀

Top o' the mornin' to ye (although be it tis really afternoon)! Tis a fine St. Patrick's Day I'll be a wishin' ye fer sure!

Sadly, our annual St. Patty's Day gatherin' o' the clan is off this year. Tis a good thing that I'm easily entertained, because I'm havin' barrels o' fun all by meself! Although, I've had a bit o' fun from others, as well.

First thing this mornin' I awoke te a message from me weest daughter. She says...

"Top of the morning And good health To ya on this Corona virus Filled Saint Patty's day morn. May you avoid the gallows, escape the stress, and be as healthy as a trout. If God sends you down a stony path, may he also give you strong shoes. And I pray that at the end of the weary day when ye lay your head to rest that the leprechauns dance over your bed and bring ye the sweetest of dreams."

Now tisn't that a fine St. Patty's Day blessin' if ever I heard one te be sure!

This comes from the same lass who presented me with a title certificate of ownership te land in Ireland back in 2016. And tis not blarney! I legally own a one square-foot piece of property in County Roscommon, Ireland. Tis that not somethin'? Whoever would have thought of sech a thing?

Next, twas a gift from me dearest one...my darlin' one (that twould be me husband fer them that don't know better)...

...a sweet card and seeds fer growin' me own shamrocks! What a blessin'! I do so love the wee shamrocks, I do! 🍀

At present there's a fine corned beef a roastin' on the spit (that would be in the slow cooker) and twill be that served with cabbage and pratties a plenty on the supper-table t'night.

I'm practicin' the wearin' o' the green by wearing this lovely bracelet...

...another gift from me darlin' one a few years back.

Tonight we'll most likely round the day out by watching The Quiet Man with John Wayne and Maureen O' Hara...

...or maybe Darby O'Gill and the Little People with Janet Munroe and a very young Sean Connery...

...and I hope te catch a bit o' The Torchlighters Heroes of the Faith episode on St. Patrick 'imself (twill be borrowin' that from me fine, young grandchildren).

I twill also be sharin' The Real Story of St. Patrick's Day with ye from The Voice of the Martyrs. Te read that click HERE.

Other than that...I guess that twill be all of the celebratin' we'll be afforded here this year. I do have treats for the grandchildren...

... tiny black kettles filled with leprechaun treasure and gold. I twill attempt te get those te them sometime this week.

Well, I suppose that's it! I do hope that this post has served as a bit o' distraction from the seriousness of all the madness that is goin' on around us and, perhaps, maybe, even afforded ye a smile or two along the way.

Before I bid ye a fine farewell for the now, let me leave ye with this fine Irish blessin'...

"May your days be many and your troubles be few, May all God’s blessings descend upon you, May peace be within you, May your heart be strong, May you find what you’re seeking wherever you roam."

Until next time...
