Evening Journal - Tuesday, November 29, 2022

It's getting late, but I thought I'd pop in for just a bit before heading for bed. Have you had a good day?

Christmas Tree in My Bedroom

~ What Time It Is...

... 10:20 p.m.

~ What I'm Doing...

... taking a break and having a cup of tea before bed.

~ I Am Praising The LORD For...

... another opportunity to spend time with my girls this afternoon. 

~ Things That Made Me Smile Today...

... bumping in to an old friend in an unexpected place at an unexpected time and just moments ago I discovered that it's snowing!!! 

~ What I Did Today...

... Amanda had to return Kayla to her biological mother after the Thanksgiving holiday, so, afterwards Amber and I met her and Alysia for lunch in Nevada. We stopped at Dollar Tree, Walmart, and Wood's Supermarket while in town to pick up a few groceries and other things. After I got home I decided to bite the bullet and put up a couple of Christmas trees. I'm not putting the big one up this year because of the kittens, but I did put up two smaller ones...one in the kitchen and another in my bedroom. I just hope the kittens leave them alone and don't wreak havoc. Time will tell! 😁

~ My Evening Prayer...

... that the Lord's peace would settle upon loved ones that have lost family members this week and that He would strengthen, encourage, and comfort them in whatever way they need. Please put the Staub/Pennington/Genser families after the loss of Grandma Staub and the Chiles/Vansel/Burkenbile families after the death of my ex sister-in-law, Shirley. Thanks so much!

~ What's For Supper...

... actually...I didn't have supper tonight...just sort of snacked.

Morning Journal - Thursday, November 10, 2022

 ~ I Awoke...


... to a warm stuffy bedroom. Even with the fan running it was still stuffy. I opened the south bedroom window and the front door to get a cross breeze going. It's 71 degrees right now. After a high of 75 this afternoon temperatures are expected to tumble into the 30s by morning. After that, afternoon highs in the 30s and 40s are expected with lows in the teens and 20s. 

~ I Am Hearing...

... the fridge and the fan in my kitchen running...that is all.

~ I Am Thankful For...

... the forthcoming cooler weather.

~ Something That Makes Me Smile...

... receiving letters from my grandchildren in the mail.

~ I Am Thinking...

... about the wreck of the Edmund Fitzgerald. Today marks the 47th anniversary of it's sinking in Lake Superior. I'll never forget that day. We had just returned from our latest trip up there in September of that year. Mom and I were in the kitchen when the news report came over the radio. She was doing dishes; I was sweeping the floor. Upon hearing the news, we both immediately stopped what we were doing and looked at each other horrified. Then, we began crying, hugging, and praying. It was awful! My heart still aches for the families of captain and crew.


The annual Edmund Fitzgerald Memorial Beacon Lighting ceremony will be held this afternoon at Split Rock Lighthouse near Two Harbors, Minnesota where the names of the crew will be read to the tolling of a ship's bell. It is a solomn occasion that will be broadcast live online. The event starts at 4:30 p.m. Central time today. 

~ My Plans For Today...

... I didn't get to go shopping yesterday, as planned, so will be doing it today on the way to a doctor appointment in Lockwood. I need a few grocery items at Walmart, but am mostly looking for Christmas cards and some Christmas craft items needed to start working on a gift idea. I'm thinking Dollar Tree might have just what I'm looking for. Will have lunch with Amber and the children and plan on paying my property taxes at the courthouse while we're in town.

~ What's For Supper...

... chili or soup with crackers.

~ Things That Made Me Smile Within The Last 24 Hours...

... Christmas lights! Tony outlined the front porch in them for me yesterday afternoon, which is good because cold weather is supposed to arrive by the weekend. 🥶

~ I Am Thinking...

... about the upcoming holiday season. I found a really good deal online for something yesterday that I was hoping to do for some of the grands, so I took advantage of it and ordered. I need to get myself together, though., see what's done and see what's still needs doing. Christmas with the fam is celebrated two weeks before the actual holiday, so time is short to get it all together!

~ My Plans For Today...

... vote, go to the bank, pick up a couple of things at Dollar General, watch AmericStands on The Victory Channel tonight, and attend a watch party at Patrick and Amber's.

~ What's For Supper...

... am eating supper at the watch party, so, not sure, but am absolutely possitive that, whatever it is, it will be good! 😁

... taking an afternoon break and enjoying a cup of hot tea.

~ I Am Praising The LORD For...

... a beautiful autumn day! It's very windy here on the tallgrass prairie of southwest Missouri today, but the sun is shining and the temperature is in the mid-70's. I am thankful for each and every nice day that we get because no a/c and no heat equals $$$ in my pocket, and we can all use extra $$$ in our pockets these days, can't we?

~ Something Beautiful...

... the sight and sound of brown crunchy leaves skiddering down the street and dancing their way across the lawn.

~ From Today's Scripture Reading...

... "Trust in the Lord with all thine heart, and lean not unto thine own understanding. In all thy ways acknowledge him, and he shall direct thy path. Be not wise in thine own eyes: fear the Lord, and depart from evil. It shall be health to they navel and marrow to thy bones." (Proverbs 3:5-8)

~ What I've Accomplished So Far Today...

... made bed, straightened house, went to the bank, dropped out-going mail off at the post office, paid utilities, picked up a couple of things at Dollar General, got my health care plan for 2023 fixed and finalized, made and ate lunch.

~ What I Have Left To Do...

... work in the Van Gogh room (it's a mess ALWAYS!), make supper, get ready for work tomorrow.

~ What's For Supper...

... taco soup served with cheese, sour cream, and corn chips.

Afternoon Journal - Monday, January 9, 2012/RECIPE: EGGPLANT PARMIGIANA






~ What Time It Is...

... 3:48 p.m.

~ What I'm Doing...

... taking a late afternoon tea break after a long day in the kitchen.

~ I Am Praising The LORD For...

... the Truth of His Word and for His faithfulness to, through that Word, and through the power of the Holy Spirit, to lead us unto all Truth.

~ Something Beautiful...

... warm weather and sunshine! Most days lately have been in the 50's and 60's. Every day that we have like this puts us one day closer to spring! (And I can't wait!)

~ Something That Made Me Smile Today...

... my family.

~ What I've Done So Far Today...

... made the bed, exercised, cleaned out the fridge, made a food inventory and menu plan based on items that need used up right away, made supper, and a loaf of French bread.

~ What I Have Left To Do...

... a load of laundry, supper dishes, write a couple of letters to friends.

~ What's For Supper...

... Eggplant Parmigiana (recipe below)



EGGPLANT PARMIGIANA

(NOTE: This recipe was taken from the original Kansas City Knights of Columbus wives' cookbook and it makes a HUGE casserole. For just the three of us, I quartered the recipe, but am sharing it as given.)

4 cups basic tomato sauce
4 medium eggplants
1 (10 oz.) pkg. sliced Mozzarella cheese
8 oz. grated Romano or Parmesan cheese
2 medium size onions, thinly slices
2-3 cups bread crumbs
3-4 eggs, slightly beaten
1/4 c. fresh or dried basil
Salt and pepper to taste
Oil for frying

Peel and slice eggplant; make round slices about 1/4 inch thick; soak eggplant 1/2 hour in salted water. Drain well; press out excess water with paper toweling; salt and pepper slices to taste. Dip slices in slightly beaten eggs and then into bread crumbs. Fry eggplant in oil until crisp. Drain on paper toweling. Using a large casserole, begin with a layer of sauce, then eggplant, then Mozzarella cheese, onion rings, sweet basil, and grated cheese; top with sauce. Continue layers until all ingredients are used, ending with sauce and grated cheese on top. Cover; bake 45 minutes at 350 degrees. Serves 10 to 14.

~ I Awoke...

... to the ring of the telephone...a morning sunshine call from my daughter-in-law. (smile)

~ I Am Hearing...

... the sounds of my husband and son as they go about their morning routine.

~I Am Thankful For...

... the hope and encouragement that the Lord sends my way through other women. It may come in the form of a spoken word or a hand-written note...a phone call...a prayer...or through a new blog that I just happened to stumble across. However it comes, I always know when it's from Him and I can't help but whisper, "Thank You, Lord!"

~ Things That Made Me Smile Within The Last 24 Hours...

... my crazy 16-year-old. He had me laughing so hard when we were exercising last night that I could barely do what I supposed to be doing!

~I Am Thinking...

... about my plans for the day, week, and rest of the month, the upcoming holiday season, and frugal ways in which to do for and give to others.

~ My Plans For Today...

... today will be a quieter day than most (I hope!). My plans are to straighten house, attend afternoon Bible study, and have tea with a friend as we plan and work on sweet Christmas surprises together.

~ What's For Supper...

... breakfast is over, lunch is ready and waiting on the stove (ham and beans with cornbread warm in the oven), and supper is already cooking in the crockpot. Tonight we're having Crockpot Lemon and Garlic Chicken (recipe below), baked sweet potatoes, green beans, and homemade bread.
 
 
CROCKPOT LEMON AND GARLIC CHICKEN
 
(This is one that we especially like!!!)
 
2 pounds chicken breasts or tenders
1 tsp. oregano
1/2 tsp. seasoned salt
1/4 tsp. black pepper
2 tsp. butter
1/4 c. water
3 T. lemon juice
2 cloves garlic, minced or crushed
1 tsp. chicken granules
 
Brown chicken in skillet, then add all ingredients to crockpot. Cook on HIGH 21/2 to 3 hours or LOW 5 to 6 hours. Spinkle with parsley right before serving.

... 8:49 p.m.

~ What I'm Doing...

... just got reading the next chapter of Given To Hospitality - Cottage or Mansion. I'm really enjoying it! I'm happy to say that I got a hold of the Judy Lewis (the authoress) and I will be hostessing a giveaway for a copy of it sometime within the very near future, so be looking for it!

~ I Am Praising The LORD For...

... small successes. Little things like using up the last of the apples and squash before they go bad, sorting through a stack of papers and organizing them, finishing up a small project, and making progress on a bigger project. Small successes they may be, but, successes they are nevertheless...and I am thankful!

~ Things That Made Me Smile Today...

... the new button that my friend, Darlene, created for HEARTH AND HOME and corresponding with several new internet friends.

~ What I Did Today...

... typed my husband's notes for this week's newspaper piece, administered a literature test to my 16-year-old, worked on the November 15th issue of HEARTH AND HOME, straightened house, and cooked three delicious meals.

~ My Evening Prayer...

... that the Lord would continue to lead, guide, and direct me in the battles that take place in my mind and give me victory over them.

~ What We Had For Supper...

... spinach and feta salad, butternut squash soup, and homemade baguettes

BUTTERNUT SQUASH SOUP
4 tablespoons butter
3 cloves garlic, chopped
1 medium onion, chopped
1 1/2 teaspoon dried thyme
1 potato, peeled and sliced into 1/4-inch slices
2 cans chicken stock
1 1/2 to 2 cups butternut squash (baked and scraped free of the skin)
1 cup milk or cream
1/2 teaspoon nutmeg
salt

Melt butter in a large pot over medium heat. Add garlic, onion, and thyme. Cook until onion is translucent. Add potato and chicken stock and bring to a simmer. Continue simmering until potato is cooked through. Add butternut squash and cook until heated. Transfer soup in batches to food processor and puree until smooth. Return to pot and bring to a simmer to heat through. Add milk or cream, nutmeg, and salt to taste. Serve with salad and fresh bread. Delicious!

~I Awoke...

...just before the alarm clock was scheduled to go off. Sweet dreams still wafted and lingered on my not-fully-awake mind just as dawn began to creep over the eastern horizon. It stretched it's long fingers toward our east bedroom window illuminating it with just the tiniest hint of morning glow. Yes, another day in which to serve Him had arrived!

~I Am Hearing...

...nothing but the whir of the osculating fan. It was so warm last night that we had to turn it on to just to circulate the air.

~I Am Praising The LORD For...

...His many blessings! At this time of the year we look for them more closely that at any other time of the year and, in looking, we find that they are more than we can count. God, and His infinite love for us, is exhibited everywhere and is in everything that we do or touch. We cannot praise Him or thank Him enough!

~Beautiful Things...

...brown, crunchy, fallen leaves, round, orange pumpkins, and squirrels playing and chasing one another up and down the tree outside our front door.

~I Am Thinking...

...about how blessed we truly are, and about how, half the time, we don't even realize it.

'Lord, please, help me to never take You, or the things You've give me, or the people that You have placed in my life, for granted. In Jesus' name, I pray. Amen.'

~My Plans For Today...

...take my dad to the doctor, go to the Amish store and Dollar General, straighten the house, plan this week's menus, and work on lesson plans.

~ What Time It Is...

... 1:31 p.m.

~ What I'm Doing...

... taking an afternoon tea break between chores.

~ I Am Praising The LORD For...

... His faithfulness. It seems that no matter how feeble our attempts are to do something, He comes along and more than meets us halfway.

~ Something Beautiful...

... the words with which some women express themselves. Mrs. White over at The Legacy Of Home particularly ministered to my sometimes-weary-mother's-heart today with this article. I think that perhaps it's time for this mother to put on a pair of those "rose-colored glasses." (Thank you, Mrs. White, for ALL that you do!)

~ Something That Made Me Smile Today...

... getting our 2011 paid property tax receipt in the mail today. For the first time ever, in January of 2011, we committed to put back X number of dollars each month, so that when property tax time came, we'd already have the money put back instead of having to worry and stew over it like we normally do, and, praise the Lord! It worked! We put back said number of dollars each month and when our taxes came in the mail on the 1st of November, we already had the money to pay them! It was a great feeling being able to do that. In January we will start again and we're attempting to do this in other areas, as well...a variety of medical expenses (bloodwork, teeth, and glasses) a yearly pre-paid phone card, and a small emergency fund. Some months we're able to add and some we're not, but, overall, every little bit helps! :)

~ What I've Done So Far Today...

... made the bed, straightened house, cleaned the kitchen, baked 4 1/2 dozen muffins, and have done six loads of laundry and hung them out. Two of those loads were bedding. In an effort to cut down on utility usage I'm trying to only do laundry twice a week (that way I have nice, full loads) and only run the drying to defuzz and dewrinkle when absolutely necessary. And, speaking of laundry...the Hillbilly Housewife has a free 'Laundry Tips' PDF file out today. Be sure and visit her today to get it!

~ What I Have Left To Do...

... put the laundry away after it's dry, make supper, and stamp tracts for tomorrow's city-wide tract pass.

~ What's For Supper...

... butter and garlic pasta with mushroom and garlic chicken, spinach salad, and homemade French bread

~ What Time It Is...

... 2:28 p.m.

~ What I'm Doing...

... enjoying my afternoon tea while I visit with YOU! <3

~ I Am Praising The LORD For...

... another beautiful autumn day! It's very windy here on the tall-grass prairies of southwest Missouri today, but the sun is shining and the temperature is in the mid-70's. I am thankful for each nice day that we get at this point!

~ Something Beautiful...

... the sight and sound of brown, crunchy leaves skidding and skittering down the road and across the lawn.

~ Something That Made Me Smile Today...

... our youngest grandson, Isaiah. Upon seeing me this morning a look of recognition came across his face, then he broke out into a big, toothless, dimply grin. I can't believe how fast the grandlittles are growing! I love each and every one of them more than life itself!

~ What I've Done So Far Today...

... made our bed, ran errands around town, made a couple loaves of bread, walked a 2-mile walk with son and dog, helped my husband take measurements on the windows he's putting in today, straightened house, and chased a chicken. :)

~ What I Have Left To Do...

... clean the kitchen, make supper, enjoy the rest of the afternoon and evening with my husband and son.

~ What's For Supper...

... stuffed pepper casserole, spinach salad, and fresh Rustic Wheat and Oat Bread from the oven (the recipe for this will be in the next issue of HEARTH AND HOME).

To make stuffed pepper casserole I used my regular stuffed pepper filling, but instead of stuffing the peppers, I spread the filling into a glass baking dish that has been sprayed with non-stick cooking spray and then I cut the peppers in half and press them down into the filling and bake as usual. It comes out really nice!

~ What Time It Is...

... 2:35 p.m.

~ What I'm Doing...

... am taking a much needed break from my Saturday cleaning and am having half an English muffin with peanut butter and a cup of hot tea.

~ I Am Praising The LORD For...

... the truth that is found only in the Bible, and for the love, mercy, kindness, and protection that He affords us each day through the power of His might, the blood of His Son, Jesus Christ, and the gift of the Holy Spirit.

~ Something Beautiful...

... the lovely swallowtail butterfly that my husband spotted in the garden (that's it's photo above).

~ Something That Made Me Smile Today...

... my husband. He can be so funny sometimes! 



~ What I've Done So Far Today...

... carpet-freshed the whole house (I make my own), cleaned the bedroom (made the bed, dusted, vacuumed, and shined the mirrors), organized the pantry area, vacuumed Tony's room, cleaned the bathroom (scrubbed the toilet, tub, and sink, shined the mirrors, emptied the trash), did three loads of laundry (including a bleach load of whites that included the shower curtain and liner from the bathroom, had a nice lunch with dh (salmon patties, baked potato, and a fresh garden salad), straightened the living-room (dusted, vacuumed, shined the mirror, vacuumed the furniture), took out the trash, and visited with a neighbor.

~ What I Have Left To Do...

... clean the kitchen, make supper, enjoy the rest of the afternoon and evening with my family.

~ What's For Supper...

... dh has proclaimed that he's fixing supper tonight...For anybody who knows him...wanna take a guess at what he'll be fixing? LOL!

...later than I wanted to, but with sweet dreams still lingering on my mind.

~I Am Hearing...

...an airplane passing overhead, the rooster crowing, and a train passing through town.

~I Am Praising The LORD For...

...another beautiful day in which to serve Him! God is so wonderful...so loving...so kind! He cares about even the tiniest...most, seemingly, insignificant things in our lives...and He works in them, and through them, to grow us and make us more Christ-like.

~Beautiful Things...

...God's Holy Word, good friends, and blooming snapdragons.

~I Am Thinking...

...about how blessed we truly are, and about how, half the time, we don't even realize it.

'Lord, please, help me to never take You, or the things You've give me, or the people that You have placed in my life, for granted. In Jesus' name, I pray. Amen.'

~My Plans For Today...

...school, do a general housecleaning with focus on a couple of areas that need a little extra going over, a load or two of laundry, clean out the fridge, and date night with hubby.

...straightened house, oversaw a full day of school, attended afternoon Bible study, had tea with a friend, and gave the dog and both cats a bath.

...is for health and healing over another friend that was just diagnosed with cancer.

... stove-top meatloaf, baked potato, and corn-on-the-cob

Evening Journal - June 7, 2011

It's been a long time since I posted a journal entry. I need to get back to them on a regular basis.


~What Time It Is...

...6:48 p.m.

~What I'm Doing...

...just got done with supper dishes and am taking a quick computer break.

~I Am Praising The LORD For...

...small successes. The past few weeks have been lost in a whirlwind of physical, financial, and emotional difficulties with very little being accomplished on the home front, but, praise the Lord! So far, this week has gone well and, small they may be, but, successes they've been, nevertheless...and I am thankful!

~Things That Made Me Smile Today...

...a friend's sweet post, a conversation between my son and his crazy friend, and the fact that the humidity wasn't as bad today.

~What I Did Today...

...quiet time with the Lord, walked with Leslie Sansone, did a general house straightening, oversaw a full day of school (that makes two whole days in a row!!! WOW!), put up ten pints of cherry jelly, and checked the sauerkraut (we're at the half-way point and it's looking good!).

~My Evening Prayer...

... that the Lord would continue to lead, guide, and direct me in the battles that take place in the mind and give me victory over them.

~What We Had For Supper...

... leftover cornbread and a one-pot favorite...home-canned green beans, canned potatoes, onion, and ham.

To make just mix one quart green beans, one can of sliced potatoes, a small onion, and a handful of diced ham. Season with black pepper and salt to taste.

...the sound of the dryer as it finishes up a load of clothes.

...meeting a very real financial need in a totally unexpected way, for the beautiful fall weather, and for answering our requests...even when we're not quite sure how to pray.

~Things That Make Me Smile...

...the assurance of God's presence, sunny days, good friends, and family.

~I Am Thinking...

...about how blessed we truly are, and about how, half the time, we don't even realize it.

JOURNAL ENTRY - THURSDAY, OCTOBER 1, 2009

~I Awoke To...

...a cool, gray, rainy morning...yet, with all that, it's warmer this morning than it has been most lately. We've been waking up to temps in the mid- to upper-40's; right now it's 64 degrees.

~I Am Hearing...

...the rain as it gently patters against the south side of the house. I can hear the 'ping' as each drop hits, then bounces off, the air condition that is in the living room window.

~I Am Praising The LORD For...

...the beautiful weather, the cooler temps, the miracles that He continues to bring forth and work in the lives of each of our children and grandchildren, for the fact that Silas is doing so extraordinarily well with his new prosthetic (he's only had it a month and word has it that he'll be ready for a new one much, MUCH sooner than expected!), and for the wonders of autumn in Missouri.

~Things That Make Me Smile...

...corn shocks, straw bales, big orange pumpkins, and mums!

~I Am Thinking...

...about good friends...past and present...and about all the wonderful people that God has brought into our lives at different reasons and different seasons over the years...and I am so thankful for each one...for the times we've shared and even for the not-so-good-times...for in them lessons have been learned and growth has taken place. God has always been there.

...11:50 p.m.

~What I'm Doing...

...am unwinding with a cup of tea after a long day.

~I Am Praising The LORD for...

...loving me enough to convict me when I'm wrong.

~Things That Made Me Smile Today...

...a tired puppy, a sleeping boy, and autumn things.

~What I Did Today...

...did a general house straightening, did two loads of laundry, built squirrel den boxes with my husband and son, needed to mow across town, but went to Pittsburg (Kansas) with my dh instead...after we got home I cleaned house, did dishes from earlier, did two loads of laundry, and visited with a cousin on the phone for almost TWO hours (my goodness!)...since then I've been working on a little craft project I've been thinking about doing.

...are focused on my family, friends, community, and nation.

~What Time It Is...

...11:05 p.m.

~What I'm Doing...

...am winding down after a full day...am getting ready for bed.

~I Am Praising The LORD...

...because, no matter how bad things may appear to be, He is still on the throne, and He is in control!

~Things That Made Me Smile Today...

...my grandchildren and the nutty smell of walnuts.

~What I Did Today...

...put in a full day of school, did a general house straightening, washed two loads of laundry and hung them out to dry, picked up walnuts, wrote a couple of short letters, had delightful visits with four of our grandchildren, as well as their parents, visited with one uncle who called this afternoon, and was paid a surprise visit by another uncle and cousin this evening. So nice to see everyone!

~My Evening Prayers...

...the Islamic day of prayer on Capitol Hill is tomorrow. We need to be praying folks!

...having tea and taking a short after-supper, but before-doing-the-dishes break.

~I Am Praising The LORD For...

...His loving care and wondrous provision in every area.

~Things That Made Me Smile Today...

...the cool weather and the fact that it's the first day of autumn! YEAH!

~What I Did Today...

...put in a full day of school, had lunch out with my dh and son, went grocery shopping, mailed a package overseas, and made an egg delivery. I still need to do a quick pick-up around the house and a load of laundry.

~My Evening Prayers...

...are focused on dear friends and family members who are experiencing difficulties on so many different levels and in so many areas. May the Lord's peace be upon each.
