Delicious Homemade Recipes For Using Apples!

I've always dreamed of having an apple tree in my backyard. You know the old saying, "Be careful what you wish for?" Now that I actually have my own apple tree, I stand in my yard watching the apples piling up around me thinking, "Oh no -- What do I do with this mess now?"
If I could make gasoline out of apples, I could retire, but since that is not an option and my frugal mind will not allow me to waste one apple, I have had to come up with some yummier "apple disposal" methods.
If you find that you have a few dozen more apples than you know what to do with, or if you just can't resist the great sales that stores have on apples this time of year, these recipes from Dining On A Dime will help settle your frugal dilemma.

Apple Tips:
  • When you have a partially eaten apple, save the good part and chop it into pieces. Place in a microwave safe dish. Blend together 1 tsp. each brown sugar, flour, oatmeal and margarine and a dash of cinnamon. Top the apple with the topping and microwave until tender.
  • Core and slice apples very thin. Dehydrate and use in granolas, eat alone or soften in warm water to use in recipes.
  • Slice apples and use in pancakes or waffles.
  • Freeze extra apples for later. Peel, slice and core them and then store in 2 cup portions in freezer bags.
  • Use soft apples in cooking.
  • Cut apples into small pieces and add to salads with a fruit based dressing.

Homemade Apple Butter
9 to 10 apples, cored, peeled and chopped
2 cups sugar
2 tsp. cinnamon
1/8 tsp. cloves
1/8 tsp. salt
Place everything into a crockpot. Stir, cover and cook on high 1 hour. Cook on low for 9-11 hours or until thick and dark brown. Stir occasionally. Uncover and cook on low 1 hour longer. Stir with whisk until smooth. Refrigerate or Freeze. Makes 2 pints.

Apple Pie Filling
9 cups baking apples, peeled, cored and sliced
1 1/2 Tbsp. lemon juice
5 cups water
2 1/4 cups sugar
1/2 cup cornstarch
1/2 tsp. salt
1 tsp. ground cinnamon
1/8 tsp. nutmeg
Toss apples with lemon juice and set aside. Combine the rest of the ingredients in a Dutch oven and bring to a boil for 2 minutes, stirring constantly. Add apples and return to boil. Reduce heat, cover and simmer until apples are tender (6-10 minutes). Cool for 30 minutes. Then ladle into freezer containers or bake immediately. Makes two 9-inch pies.

Fried Apples
4 large apples, cored and sliced
3 Tbsp. butter or margarine
1/3 cup brown sugar
1/2 tsp. ground cinnamon
Cut apples into 1/4 inch slices. Heat butter in a large skillet. Put the apples, brown sugar, and cinnamon in the skillet and cover. Over medium-low heat, cook apple slices 7-10 minutes or until they begin to soften and the syrup thickens. Serve coated with excess syrup on top. Serves 4.

Baked Apples
apples, cored
raisins (optional)
1 tsp. margarine
dash of cinnamon
dash of nutmeg
1 Tbsp. honey or brown sugar
(These ingredient amounts are per apple.)
For each person, use 1 apple. Fill the center of the apple with all the ingredients. Bake at 350 degrees until tender or put in a Dutch oven on top of stove and simmer on very low until tender.

Apple Snack
2 qts. apples, peeled, cored and halved
Coarsely grate apples. Place on a greased cookie sheet. Bake at 225 degrees until dry. Remove from cookie sheet and break into pieces. Store in an airtight container.

Apple Crisp
6 apples, peeled and sliced
1/2 cup butter or margarine, softened
1 cup brown sugar
1/2 cup oatmeal
1/2 cup flour
1 tsp. cinnamon and/or nutmeg
1/2 cup water
Preheat oven to 350 degrees. Arrange apples in a well-greased baking dish. Blend all remaining ingredients except water. Spread evenly over top of apples. Pour water over the topping. Bake 45 minutes until apples are tender and top is crisp. Serves 6.

Peach Crisp
Use peaches in place of apples.

Frugal living is all about making the most with what you already have. Here are 11 tips from LivingOnADime.com to help you get started:
  1. Barter for services when possible. For example, we exchanged lawn mower repair from our neighbor for a table (garage sale find) that he was looking for.
  2. Learn to fix things for yourself. These days, with the Internet making information so easily available, you can fix most things yourself. We do 95% of the repairs around our house and we aren't that handy. We just keep looking for the information about how to do it and keep working until we get it fixed!
  3. Stop eating out. I know you hear it all the time but STOP!!! The "average" family spends $300-$500 a month just eating out! Eating out truly is one of the biggest causes of debt! I am always amazed how someone can be "totally broke" and can't pay their bills but are still able to go to the drive-thru of their favorite restaurant.
  4. Study nutrition information and find out what you need to eat to have a healthy and balanced diet. Then stop eating the junk and eat healthy inexpensive meals at home. We have a lot of menu ideas here at LivingOnADime.com that can help you get started.
  5. If something breaks and you don't have the money to fix or if you are out of something and you don't have the money to buy more, figure out a way to live without it. If the lawn mower breaks, can you borrow a friend's lawn mower? If your washer breaks, go to the laundromat. If you break your tea kettle, use a saucepan to heat water. In most instances, you can find a way to make do or do without something until you have the cash saved up.
  6. Do things for free. Go to the library, have a picnic or read a book. Kids are just as happy playing with mom and dad in the backyard as they are going to the zoo. If you can't pay cash for the "fun stuff" you can always have fun at home.
  7. Buy items used. We buy 90% of the items for ourselves used. Going to yard sales and thrift stores does not take any longer than going to a retail store but you can save 90% off the retail price!
  8. Just say no...to your kids. Let kids buy their own toys and extras! Our kids pay for all their own soda, candy, treats like nail polish, their own computers and extras. You are not the Bank of Mom so just say no!
  9. Find a cheaper way to do things. Go to a beauty school to get your hair colored (or don't have your hair colored at all it isn't something you need to survive). Go to a mechanic school to get your car fixed. Hire a kid instead of a lawn service to mow your yard (only if you can't do it yourself for medical reasons. :-) Paint your own house instead of hiring someone, cut the cable and the cell phone (gasp!), and have birthday parties at your house. There is almost always a cheaper way to do things so try to find the cheapest way and save some money!
  10. Cut kids' activities. Most kids are in way too many activities and they're often expensive. I know families who pay $175 a month for gymnastics lessons but can't pay the mortgage. There is a problem with this kind of thinking! Kids won't die if you don't give them all the lessons and activities you can't afford.
  11. Get it for free. When the landscapers were laying sod in our new neighborhood, I asked for the scraps and we were almost able to put in our entire backyard for free. When they were building houses, I asked for the 2x4's that were going into the dumpster and got enough wood for our shed. When they were pouring concrete patios, I asked for the leftover concrete and they just poured our entire cement pad for our shed for free!! If friends have kids older than your kids, ask if you can have their hand me downs when they are done.

Get as much as you can for free and you can save thousands of dollars!

Using a little imagination, you can make your Valentine's day a little more fun and a lot less expensive. If you want to add a little personalized romance or if you don't have the time or money to buy all the pre-made things in the store, here are some ideas to help you make the day special.

For The Kids:
  • My mom always made a great but inexpensive Valentine's Day treat for us. She would take construction paper and cut a big heart out of it. (About 8x10 inches). She would staple the edges together and write our names and an I love you on the outside. Then she would fill the heart with candy, purchased on clearance after Christmas. It was very inexpensive but we loved it!
  • Have a Valentine's Day treasure hunt. Leave little notes around with the last one leading back to the kitchen table with a heart full of candy.
  • Leave sticks of red gum in their Valentine's Day cards.
For The Lunches
  • Make heart shaped Valentine's cookies. Cut the kids (or hubby's) sandwiches with a heart shaped cookie cutter. Add a few Valentine's chocolates and put a note in red with a big heart on their napkin.
  • Serve anything red for the day. Serve red Jello, red pudding, red apples, toast with strawberry jelly, tomato soup, red applesauce, red Kool-aid, strawberry milk, or red frosted cookies. Use powered food coloring from the cake store to get the deepest shade of red. Serving all red things at a meal will really have wow factor even if it is something as inexpensive as red jello and tomato soup.
  • Make red heart shaped cupcakes. Make cupcakes as usual but place a marble down the side of the muffin tin between the muffin tin and each cupcake cup. This will make heart shaped cupcakes.
  • Make hearts out of chocolate chips in each of your pancakes.
Things To Do With Or For Your Honey
  • Mail your pre-addressed and stamped Valentines to Loveland, Colorado and they will postmark them and mail them for you. Send them to: Postmaster, Valentine Re-mailing, 446 E. 29th St., Loveland, CO 80538
  • Make a treasure hunt for your spouse. Start by mailing or e-mailing him the first clue. Then leave clues all over the house, yard, car or his office telling him where to find the next clue. End the hunt by making a picnic in the back yard or going to a park for a picnic. Use your imagination and have fun. The simple things are the ones people remember.
  • Go to a bookstore together and enjoy the silence and browse. Get a cup of coffee and make a date of it.
  • Celebrate Valentine's Day AFTER Valentine's day. Everything is half off.
  • Mail a love letter to your hubby's work.
  • Send your spouse a sexy email message.
  • Leave "Why I love you" message all over the house. Buy a package of the cheap Valentines. Leave a message on each one and hide them all over the house for your honey. They will get to enjoy the gift for months!
  • Use lipstick to make hearts and love notes on the rear view mirror, car windows, bathroom mirror or windows of the house. Leave a kiss on his napkin for lunch or dinner.
  • Make a bunch of hearts out of construction paper. Put a love note on each one. Paste them all over the front door or car before your hubby or kids come home from work.
  • If you don't have money to go out, have a picnic on the floor. Use some candles and lay a soft blanket on the floor. Put on some soft music and have a romantic Valentine's dinner on the floor. Use some white Christmas lights for additional romantic lighting!

  1. Eat smaller portions. The less food you eat, the less food you have to buy which means you spend less money on food.
  2. Walk more. I have a grocery store 2 1/2 blocks from me. Shame on me for driving there, especially when I only need one or two items. I can't even use being in a hurry as an excuse because it takes me the same amount of time to walk as to drive. Stop complaining about gas prices and start walking.
  3. Stop paying someone else to do your work. Start doing your own yard work and housecleaning. You don't think you have time to clean? Use that hour you would have worked out at the gym each morning to do your house work or yard work. Not only do you save the money you are paying someone to do these things, but you don't have to pay to go to the gym. Don't think you can lose weight cleaning your house? Trust me. If you are doing these things properly you will lose weight. You can clean and organize in five minutes.
  4. Stop going out to eat as much. Not only does it cost so much less to eat at home but you can control how much you eat and what you are eating better. How often do you eat everything they give you in a restaurant just because you don't want to waste money? Make easy meals at home and save money.
  5. Take the kids to the park instead of the movies. It doesn't cost a thing to go to the park and you get exercise. Plus there is the added benefit of actually talking and playing with you kids instead sitting staring at a movie.
  6. Drink water and not pop (or sodas). We all know it. Pop is just empty calories with no benefit. Why spend the money or pack on the extra weight?
    That goes for Lattes too. It costs much less to just have a regular cup of coffee from home and is much less fattening. Save the lattes for a special treat or dessert.
  7. Reduce excess scheduled activities. Many of us are just too busy with things that are often not really that important because we think that's the way it should be. Eliminating some of your excess commitments will save on gas and will reduce stress, which will make it less tempting to eat or spend as a stress reliever.
  8. You don't need to bring out the fatted calf to entertain or impress people. Have simple cake and punch at your child's birthday party instead of going to Chucky Cheese's. It's funny how the expensive flashy things are rarely the things the kids remember fondly when they grow up.
    If you're having people over for dinner, keep the food simple. You don't need a 10 course meal that includes everything from lobster to an expensive cheesecake. There are very few people who wouldn't enjoy roast chicken with fresh fruit for dessert just as much, especially if the company is good.
  9. Stop shopping and start exercising. When under stress there are two things at the top of the list that people do. Shopping and eating. Have a plan of attack so that when you start feeling stressed instead of grabbing your purse (or wallet) and heading for the mall you hit the yoga mat, hop on your bike or just start walking.
    Do you know how much money you would save if you exercised instead of shopping? Not to mention you probably would rid yourself of a lot of your stress. If you don't have as many money problems from over spending you wouldn't feel the need to go shopping or over eat and you would eventually break the cycle.
  10. Drive quickly by fast food joints. Don't even drive by them. Don't drive on the same street where they are. If you have a big problem with this, don't drive in the section of town where they are. And if you have any in your town then move to another town! (This was my favorite son-in-law's idea. Guess where his weakness lies! HA! HA!)

If I said I would give you $150 extra a month to help you pay off your credit cards, lose weight and help your family become healthier, would you accept it? Does it sound too good to be true? The average American family spends 1/4-1/3 of their monthly grocery bill on things to drink but can't find any extra money to pay off their credit cards.
Do you buy sodas, coffee, tea, juice and milk, plus all the things that go into these drinks like creamer, flavorings and sugar? Do you grab a glass of soda, juice or milk instead of a cold glass of water? You may even argue that juice and milk are good for your children but fertilizer (food for you grass) is good for your lawn.
We all know that too much fertilizer will kill it and if you don't water it, it will die. I'm beginning to wonder if most of us are more concerned about making sure our yards are watered then our children. Of course they need some milk but like everything else do it in moderation.

Here are few tips to cut the costs of the drinks in your home and find some extra money to pay of your credit cards:
  • Find out how much milk is actually needed for your child. The USDA recommends that children under 5 get three to four servings of dairy per day. That is 2 cups of milk OR one serving equals one slice of cheese OR 1/2 container of yogurt. Don't forget milk added to cereal.
  • Juice is just sugar water. Eat the whole fruit instead and give one glass of juice as a treat for breakfast or snack.
  • Limit the number of glasses of milk or juice given a day. After the allotted amount they get nothing else but water. If they are used to drinking it for meals, either give them one glass (1/2 cup) and when it's gone they drink water or have them drink water first and then milk after they finish their meal.
  • Use small juice glasses. They give the appearance of more.
  • Don't fill their sippy cups with juice or milk. Give them water instead.
  • If you put some milk in a cup and they don't drink it all, put it in the fridge until later.
  • Limit sodas to a treat once or twice a week.
  • Don't dilute your juice with extra water. Not only does this not taste very well but by "stretching" the juice you teach your kids bad eating habits by giving into their demands for juice instead of giving them water.
  • Keep water in the fridge. After water has set, the chlorine evaporates and the water tastes better cold.
  • Add a small amount of lemon juice to your water if you don't like the taste.
  • Be careful to shop wisely. Sometimes buying name brand flavored or specialty coffees on sale costs less than making your own.
  • Use powdered milk instead of creamer in coffee or tea or try mixing your creamer half and half with dry milk.
  • After making coffee save the coffee filter and the coffee grounds in the maker. Add your coffee for the next day on top of the old grounds. This way you can use each filter 2 or 3 times. Buy a reusable coffee filter. They last for years.
  • If you run out of coffee filters use a paper towel until you can get to the store to buy more.
  • You don't always have to make a full pot of coffee. Just make one or 2 cups at time.
  • Save extra coffee in a thermos instead of making a new batch or buy a smaller coffee maker.
  • To make flavored tea, add a package of flavored drink mix to each pot of tea.
  • For leftover soda - Combine 2 cups of flat soda with 1 package of unflavored or same flavored gelatin to make a rich flavored gelatin. This is particularly good with root beer, orange and grape sodas.

Creamy Orange Shake (like Orange Julius)
1/3 cup frozen orange juice concentrate
1/2 tsp. vanilla
1/2 cup milk
5-6 ice cubes
1/4 cup sugar
2 scoops vanilla ice cream
1/2 cup water (optional)
Combine ingredients in blender until smooth. Can be kept in the refrigerator 1 day. Serves 4.

Cafe Vienna
1/2 cup instant coffee
2/3 tsp. cinnamon
2/3 cup sugar
1 tsp. dried orange peel
2/3 cup nonfat dry milk (optional)
Stir ingredients together. Process in a blender until powdered. Makes 1 1/3 cups mix.
*Attach this note to the jar if making a jar mix:
Use 2 teaspoons to 1 cup of hot water.

Swiss Mocha
1/2 cup instant coffee
2 Tbsp. cocoa
1/2 cup sugar
1/4 tsp. vanilla
1 cup nonfat dry milk
Stir ingredients together. Process in a blender until powdered. Makes 2 cups mix.
*Attach this note to the jar if making a jar mix:
Use 1 cup of hot water and 2 tablespoons of coffee mix for each cup of coffee.

Living On A Dime - Less Is More This Christmas!

After laying down my last women's magazine telling me how to be less stressed during the holidays, I'm even more confused and stressed then ever. On one page I'm told to take time for myself and indulge in a lovely spa bath. As I turn the page, I'm told to give all my friends and family homemade ornaments. Then there are articles telling me how not to gain weight at Christmas parties. Isn't that like telling a three year old to not get dirty while making mud pies?

To top it all off (and the part I like the best) is after they tell us how to get rid of stress and not gain weight, they give us 10 pages of recipes for Christmas cookies made with real butter and cream that are decorated so elaborately in the pictures that it probably took a trained kitchen staff of 10 a week to make one cookie.

Doesn't anyone live in the real world anymore? If you are like me and can't stand that kind of stress, try some of these Christmas ideas from www.LivingOnADime.com to help you have a relaxed and Merry Christmas.
  • Don't over-spend - It may be tempting to fixate yourself on the sparkling look in little Johnny's eye when he sees that $300 play car under the tree. Advertising people are really good at feeding many parents' fantasies of their children thinking that mom and dad are the peaches and cream for shelling out the cash and looking fondly back on the moment for the rest of their lives. In reality, most kids have lost all interest in that particular toy long before the credit cards are paid off.

    When we were growing up, my mom pulled out all of the stops at Christmas to make it as wonderful for us as she possibly could. The funny thing is that now that we are grown, the things we remember the most fondly are Mom's red jello salad (made with red hots - yummy!) and sitting together and reading the Christmas story before opening our presents. I can't remember what presents I received, but I always look back fondly on the Christmas story.
  • Do a few things well - Instead of trying to do everything and ending up depressed with how it all turns out, focus your energy on a couple of things that are the most important to you. You may be tempted to extravagantly decorate every room in your house, but if you don't have the time or energy, focus on one room, like a living or family room. If your entire house is beautiful but you have to go see a therapist when it's all over, the romantic mystique will be lost. Trust me, I know about this one from personal experience.
  • Limit activities - Think of the holiday season as triage for activities. Don't commit to do too many things. One or two parties during the holiday season will make you get all tingly in that "It's a Wonderful Life" kind of way. One or two parties a week may send you over the edge, especially if you have kids. (Refer to my therapist comments above.) This also applies to all of those appealing looking activities around town like Victorian Christmas events, Christmas celebrations at the zoo or winter carnivals. One or two can be a lot of fun, but too many will ruin the fun.
  • Limit cookie baking - Don't try to make 15 different kinds of cookies like Martha. She may look like she is super woman, but did you know she has a lot of people that help her? How much help do you get with your baking? I mean real help, not your five year old who makes everything twice as difficult for you. This is great for grandma, but you have to see your daughter every day and grandma can send her back when the house is sufficiently covered in flour. Again, pick your two or three top favorite cookies to bake and celebrate the fact that you had few enough priorities that you remembered to put the sugar in them.

    Everything doesn't have to be homemade. I know that we advocate making your own stuff, but Marie Callendar's makes some great pies that you can pass off as homemade if you want to soothe your guilty Martha Stewart conscience. In 20 years, your kids will look fondly back on it as the best pie they ever had. But seriously, if you are making things homemade just to save money, remember that some things like candies and pies are often more expensive to make homemade, especially if you cut your finger while slicing the apples. Don't ask me how I know, just trust me on this one.
These aren't the only things you can do to reduce your stress, but if you stick to doing a few things well, you can truly relax and enjoy the season with your family. In the end, they would rather have fond memories of their time with you than memories of how strung out mom was after she burned the cookies.

Between high gas prices and consumers' sense of a financial squeeze in a struggling economy, many people think that a nice Christmas is out of the picture this year. But I say "Not so!" Here are a few ideas to help make Christmas memorable without breaking the bank!
  • Go Potluck! You buy the turkey -- Have everyone else bring the side dishes and drinks. Turkeys in our area are .59/lb this time of year. If you buy just the turkey, it will only cost you about $10-$15 to feed everyone for a large family gathering.
  • Celebrate Christmas the week after Christmas. Take advantage of the after Christmas sales and plan your large extended family gathering for the week after Christmas. Besides being less expensive, it is unlikely to interfere with anyone else's Christmas plans.
  • Don't give gifts or give inexpensive gifts to hairstylists, babysitters, teachers and others. I found several wonderful small scented jar candles on clearance for .25 each. I will put three of them in a small basket (purchased at the thrift store for .25) with some tissue paper, ribbon and nice note. A great gift for $1.25!
  • Break up gift sets. If you find an item that comes in a gift set at Christmas, give parts of it to different recipients. This is great for bath or perfume sets.
  • Yard sales and thrift stores equal great savings. You can find a lot of new or nearly new items for pennies on the dollar. For our son, we found a working telescope in the box. It cost $1.00, so we saved $24! He got what he wanted and we didn't have to take out a home equity loan!
  • Make memories, not more junk. Most kids get more than plenty for Christmas from grandparents, aunts and uncles. If you can only afford one gift for your child, make it a memory! Wrap a note in a box with instructions for a treasure hunt.. Send your child all over the house with clues and then have the real gift sitting under the tree when they return. Simple, but a great memory for them!

Here are some great recipes to use for Christmas!

Mint Chocolate Cookies
2/3 cup margarine, softened
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
1/4 cup milk
2 cups flour
3/4 cup baking cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

Filling:
2-3/4 cups powder sugar
1/4 cup half and half cream
1/4 tsp peppermint extract
1/4 tsp. salt
Green food coloring

Cream butter, sugar then add milk and eggs. Combine dry ingredients and add to creamed mixture and mix well. Cover and chill for 2 hours until firm. Roll dough on floured surface about 1/8 inch thick Cut with 1-1/2 inch cookie cutter and place 1 inch apart on greased cookie sheet. Bake at 375 degrees for 5-6 minutes or until edges are lightly brown. Cool on racks. Combine filling and spread on half of the cookies, then top with the other halves. Makes about 7 dozen.

(This recipe may not sound appealing with vinegar in the title but it really is yummy. For something different this year, try having an old fashioned taffy pull! It's a great party for teens or adults. Use different taffy recipes and play fun, silly games or watch a Christmas movie while eating the candy you made along with popcorn and cookies.)

Vinegar Taffy
2 cups dark corn syrup
1 cup sugar
2 Tbsp. butter
food coloring
1 Tbsp. vinegar
1 tsp. baking soda
1 tsp. vanilla

Combine first four ingredients in a saucepan. Bring to a boil over medium heat, stirring constantly until sugar dissolves. Continue cooking to 260 degrees. Remove from heat and stir in soda, vanilla and a few drops of food coloring. Beat until smooth and creamy. Pour into a buttered pan. When cool enough to handle butter hands and pull until light in color. Pull into long strips and cut into 1 inch pieces. Makes 8 dozen.

Herbed vinegars make great gifts especially if you want to give something different than the sweets most people get at this time of year. They're also good for those who have to watch their sugar. Don't forget the cooks in your life too!

If you're trying to make it in time for Christmas, you'll want to make it soon as it needs to age before it is used.

Herbed Vinegar
2 cup white vinegar
1 cup fresh herbs: basil, mint, dill, rosemary, chives or oregano (choose one)
Decide which herb you'd like to flavor your vinegar. Place the vinegar in a glass jar or bottle. Add herbs, seal and let steep for 2-4 weeks. The longer you let it steep, the stronger the vinegar. Remove herbs and put in 2 or 3 sprigs of the herb for decoration. Seal bottle with cork and then pour melted paraffin around the top and tie with a ribbon for gift giving. Makes 2 cups.

Halloween is over, which means it is now officially time to kick it into gear to get ready for the holidays and to get your house ready for company. It really helps to get your house in order now because if unexpected company comes you won't get caught off guard. Then you can concentrate on baking, finding gifts and organizing activities without having to worry about deep cleaning your house again until after the New Year.
Hopefully by now you have been inspired to start getting things done a little at a time so this won't be too big of a job. Here are a few things to work on:
  • Get your closets in order. Put summer clothes away and take winter clothes out, tossing as you go.
  • Don't forget your linen closets. Get your guest towels, sheets and extra blankets aired out and put the linens in a handy spot so they are easy to grab when you need them.
  • If you have a guest room, get it cleaned and prepare everything for your first guests.
  • Get your holiday linens prepared. Wash them if necessary and make sure they're ready to go.
  • Hopefully you have cleaned your pantry. Now you need to make sure it is stocked with everything you need for your holiday recipes, for some quick and easy to fix snacks and dinners for unexpected company or food to take to social events.
  • Make sure your fridge and freezer are in order. The refrigerator and freezer are going to work overtime for you over the next couple of months so make sure they're cleaned, organized and prepared.
  • I don't worry about cleaning my oven at this time. I use it so much for baking that it's silly for me to clean it right before having a baking fest. I usually wait and give it a good cleaning after the holidays. If it's really bad or you have company coming and it looks awful you may want to go ahead and clean it anyway.
  • This week and next week is the time to do any deep cleaning that you don't want to have to mess with again until after the holidays-- things like washing your windows, deep cleaning rugs and carpets and dusting mirrors, picture frames, lampshades or ceiling fans.
If you have been keeping up with your cleaning you may not have to do any of these. Basically just clean your house enough for company. Then you'll know it's done and you will be prepared for the unexpected.
Part of the stress that comes at the holidays is the result of not being prepared, especially for the unexpected things that always seem to come up. Think of it like being prepared for a disaster. If I have a wood burning stove, firewood, lots of candles, blankets and food prepared, I am not too stressed if we lose power from an ice storm. If I wasn't at all prepared, I would be in a total panic if an ice storm hit.
If you are prepared, you have something you can whip up for company in just a few minutes or if the kids need treats for school, you have dough frozen and ready to be baked in the freezer. I'm not saying that I have everything prepared like Martha Stewart but I do try to have everything together enough so that I'm reasonably prepared for the unexpected. My idea of the perfect woman is a cross between Martha Stewart and Erma Bombeck! Some days I am more one than the other and on other days I totally miss the mark, but that's okay, because I tried. :-)

How to Roast a Pumpkin
You can only do this with a freshly carved pumpkin! Do not use on a pumpkin that has been carved and sitting out for several days.
To bake a fresh 6 to 7 pound pumpkin, halve the pumpkin crosswise and scoop out the seeds and strings. Place halves, hollow side down, in a large baking pan covered with aluminum foil and add a little water. Bake, uncovered, at 375 degrees for 1 1/2 to 2 hours or until fork-tender. Remove. When cool, scrape pulp from shells and puree, a little at time, in food processor or blender. Mix with a little salt.
To freeze pumpkin puree. Put 1-2 cups in freezer bags along with spices and use in pies.
To use pumpkin puree for recipes: Line a strainer with a double layer of cheesecloth or a flour sack dish towel and let the pumpkin sit to drain out the extra moisture BEFORE cooking with it. Pumpkin is very moist, so in order for your recipe to come out correctly, you MUST strain it.

Roasted Pumpkin Seeds
Boil seeds in water for 5 minutes. Drain well. Sprinkle with salt or seasoned salt. Place a thin layer on a cookie sheet. Bake at 250 degrees. Stir after 30 minutes. Bake 1/2-1 hour more or until crunchy.
*Squash seeds may also be used.

Pumpkin Smoothies
1/2 cup pumpkin
3/4 cup milk or vanilla yogurt
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 tsp. brown sugar
4 ice cubes
whipped cream (optional)
sprinkles (optional)
Place all ingredients in a blender. Blend until smooth. Pour into 2-3 glasses. Serve with a small amount of whipped cream on top. You may also add orange sprinkles if you like. Serves 2-3.

Pumpkin Crunch
1 package yellow cake mix
1 can (15 oz.) solid packed pumpkin
1 can (12 oz.) evaporated milk
3 large eggs
1 1/2 cup sugar
1 tsp. cinnamon
1 tsp. salt
1/2 cup nuts
1 cup butter, melted
Heat oven to 350 degrees. Mix pumpkin, milk, eggs, sugar, cinnamon, and salt in a large bowl. Pour into a greased 9x13 pan. Sprinkle dry cake mix over pumpkin mixture. Then sprinkle with nuts. Drizzle with butter. Bake for 50-55 minutes or until golden brown. Cool, served chilled. Serve with whipped topping.

Homemade Pumpkin Muffins
1 cake mix (any flavor works, but chocolate is our hands down favorite!) 1 can pumpkin or 2 cups mashed cooked pumpkin
Beat together with electric mixer until smooth (It will be really thick). Add 1 cup mini chocolate chips and stir. Line muffin tins with paper muffin cups and spray with non-stick spray. Use an ice cream scoop to put batter into muffin cups (I can get 24 muffins from one box of mix). Bake at 350 degrees for around 20 minutes. Cool and frost if desired. My family likes them just as they are when they are hot from the oven.
Spice cake mix is great - add white chocolate chips, peanut butter chips or butterscotch chips.
I have made pumpkin muffins with white cake mix and yellow cake mix too. They have around 120 calories apiece with the mini chocolate chips and are virtually fat free. If you are on weight watchers, they only count as 1 point.
This is a fabulous way to sneak some vitamin A rich veggies in on the kids. Just don't let them see you put the pumpkin into the muffins and they will never know it is there. These are more moist than very expensive name brand double chocolate chip muffins.

Pumpkin Pancakes
2 cups flour
2 Tbsp. brown sugar, packed
1 Tbsp. baking powder
1 1/4 tsp. pumpkin pie spice
1 tsp. salt
1/2 cup pumpkin
1 large egg
2 Tbsp. vegetable oil
1 cup milk
1/2 cup nuts, chopped (optional)
Combine ingredients. Stir just until moistened; batter may be lumpy. Heat griddle or skillet over medium heat. Brush lightly with vegetable oil. Pour 1/4 cup batter onto hot griddle. Cook until bubbles begin to burst. Turn and continue cooking 1 to 2 minutes. Serve with Pumpkin Maple Sauce and nuts.

Pumpkin Maple Sauce
1 cup maple syrup
1 1/4 cups pumpkin
1/4 tsp. ground cinnamon or pumpkin pie spice Mix together until well blended.

I've always dreamed of having an apple tree in my backyard. You know the old saying, "Be careful what you wish for?" Now that I actually have my own apple tree, I stand in my yard watching the apples piling up around me thinking, "Oh no -- What do I do with this mess now?"

If I could make gasoline out of apples, I could retire, but since that is not an option and my frugal mind will not allow me to waste one apple, I have had to come up with some yummier "apple disposal" methods.
If you find that you have a few dozen more apples than you know what to do with, or if you just can't resist the great sales that stores have on apples this time of year, these recipes from Dining On A Dime will help settle your frugal dilemma.

Apple Tips:
  • When you have a partially eaten apple, save the good part and chop it into pieces. Place in a microwave safe dish. Blend together 1 tsp. each brown sugar, flour, oatmeal and margarine and a dash of cinnamon. Top the apple with the topping and microwave until tender.
  • Core and slice apples very thin. Dehydrate and use in granolas, eat alone or soften in warm water to use in recipes.
  • Slice apples and use in pancakes or waffles.
  • Freeze extra apples for later. Peel, slice and core them and then store in 2 cup portions in freezer bags.
  • Use soft apples in cooking.
  • Cut apples into small pieces and add to salads with a fruit based dressing.

Homemade Apple Butter

9 to 10 apples, cored, peeled and chopped
2 cups sugar
2 tsp. cinnamon
1/8 tsp. cloves
1/8 tsp. salt
Place everything into a crockpot. Stir, cover and cook on high 1 hour. Cook on low for 9-11 hours or until thick and dark brown. Stir occasionally. Uncover and cook on low 1 hour longer. Stir with whisk until smooth. Refrigerate or Freeze. Makes 2 pints.

Apple Pie Filling

9 cups baking apples, peeled, cored and sliced
1 1/2 Tbsp. lemon juice
5 cups water
2 1/4 cups sugar
1/2 cup cornstarch
1/2 tsp. salt
1 tsp. ground cinnamon
1/8 tsp. nutmeg
Toss apples with lemon juice and set aside. Combine the rest of the ingredients in a Dutch oven and bring to a boil for 2 minutes, stirring constantly. Add apples and return to boil. Reduce heat, cover and simmer until apples are tender (6-10 minutes). Cool for 30 minutes. Then ladle into freezer containers or bake immediately. Makes two 9-inch pies.

Fried Apples

4 large apples, cored and sliced
3 Tbsp. butter or margarine
1/3 cup brown sugar
1/2 tsp. ground cinnamon
Cut apples into 1/4 inch slices. Heat butter in a large skillet. Put the apples, brown sugar, and cinnamon in the skillet and cover. Over medium-low heat, cook apple slices 7-10 minutes or until they begin to soften and the syrup thickens. Serve coated with excess syrup on top. Serves 4.

Baked Apples

apples, cored
raisins (optional)
1 tsp. margarine
dash of cinnamon
dash of nutmeg
1 Tbsp. honey or brown sugar
(These ingredient amounts are per apple.)
For each person, use 1 apple. Fill the center of the apple with all the ingredients. Bake at 350 degrees until tender or put in a Dutch oven on top of stove and simmer on very low until tender.

Apple Snack

2 qts. apples, peeled, cored and halved
Coarsely grate apples. Place on a greased cookie sheet. Bake at 225 degrees until dry. Remove from cookie sheet and break into pieces. Store in an airtight container.

Apple Crisp

6 apples, peeled and sliced
1/2 cup butter or margarine, softened
1 cup brown sugar
1/2 cup oatmeal
1/2 cup flour
1 tsp. cinnamon and/or nutmeg
1/2 cup water
Preheat oven to 350 degrees. Arrange apples in a well-greased baking dish. Blend all remaining ingredients except water. Spread evenly over top of apples. Pour water over the topping. Bake 45 minutes until apples are tender and top is crisp. Serves 6.

Peach Crisp
Use peaches in place of apples.

Tawra Kellam, editor of LivingOnADime.com , does something that most people think they can't do today. She feeds her family of 6 for $400 a month. Most people say that's an impossible feat but what's even more impressive is that she does it without using coupons.

How does she do it? First, Tawra says, "I use what I have. If I don't have milk in the house, I don't make a special trip to the store for it. The kids won't die from malnutrition if they miss drinking milk for a day or two. If I'm out of bread, I'll make some cornbread or muffins. If I'm out of fresh veggies, I will use canned or frozen instead. Stop going to the store for one or two things. I shop for food 2-3 times a month and that's it."

Shop the clearance sections. "I regularly find milk on clearance for $1.75 a gallon. My store marks the milk down a few days before the "sell by" date. The great part is that milk stays fresh for 1 week after it's opened. I just throw several in the freezer and then I don't have to make a special trip for milk. Just thaw, shake and serve."

Purchase meat only on sale or on clearance. Again, butchers mark down their meat a day or two before the "sell by" date. Generally, meat is good for 3-4 days after the "sell by" date in the fridge or 6 months in the freezer. Tawra says "I never buy meat unless it's on sale for $1.99 or less a pound. If it's not on sale, we don't eat it. You can get some great unadvertised deals just by watching the meat counter's clearance items. I found 5 lb. rolls of hamburger for $2.95 each after New Year's Day. Of course we stocked up and will have enough hamburger to last 6 months. I can get "soup bones" with enough meat on them to make a great vegetable stew for under $2.00 for the entire family! Add some rolls and you have a complete meal for 6 for less than $3.00. When chicken is on sale for under $2.00 per pound, I stock up. I do this with all my meats. This way we can always have a variety of meats."

Ask. Most people are intimidated by asking, but Tawra regularly asks when things will go on sale or be marked down. By asking, she found out that bananas, milk and meat are marked down each morning. She tries to shop in the mornings to get the best deals. She says, "When we lived in another state, they marked things down in the evening so that's when we went shopping. Adjust your shopping times to find the best deals."

Serve your family proper portions of food. "Most parents give their kids way too much milk, juice and soda. My kids get soda on special occasions only. They eat milk with their cereal. For snacks, they eat a piece of string cheese, fruit or one or two cookies. The kids don't sip on milk or juice all day long. They drink water and are just fine with it. As a general rule, I try to give them one vegetable and one fruit for lunch and dinner and then a piece of fruit with cookies or cheese as a snack. This gets their "five a day" in very easily. Stop letting kids just "graze" on chips and other snack food all day. My kids get one small "bowl" of chips a day and that's it."

So what do the Kellams eat? Tawra shares some of their menus with us:
  • Slow cooked roast, brown gravy, onions, carrots, potatoes, buttermilk muffins and a fruit plate
    (The next day, the leftovers from the roast are used as BBQ beef along with potato salad, green beans and strawberries or grapes.)
  • Pizza (homemade), tossed salad and fruit
  • Maple glazed chicken, scalloped potatoes, glazed carrots, applesauce and dinner rolls
  • Sloppy Joes, cucumbers and tomatoes
  • Tacos, refried beans, green beans, sliced apples and tortilla chips w/ honey
With savvy shopping, you too can cut your grocery bill even when prices are going up!

One great way to save money on paper towels is to use rags more frequently. In this article, I'll briefly describe how to cut rags to get the most efficient use out of them.
When cutting a rag, you want to consider what you are going to use it for. For example, if I am going to use a rag as a dust rag I will cut it big enough so I can fold it in fourths and still have a 5-6 inch square (about). This way I can keep refolding as I dust which give me 8 sides to clean with instead of just 2. This is a good professional cleaner's tip on using any of your cleaning rags. Fold in fourths and keep refolding as you clean.
Cutting rags is great "watching TV" work and you can get the kids to do it too.

Here are some examples of how to do it:
T shirts
  1. I cut off the sleeves. If it is a long sleeve, I'll cut each sleeve in half. For dusting, I'd leave them as-is. If you are going to use them for small jobs, you might want to cut them in half again.
    • When using a sleeve, be sure to use each side and turn inside out. Use each side like you do when cleaning with a sock rag.
  2. Next I cut the sides and shoulder seams open and then cut the neck band off.
  3. Last, I cut them into the size of squares or rectangles I want. This isn't rocket science. I just eyeball it. It's only a rag. If you ruin it you can toss it, so relax.
Towels
Don't cut towels. Terry cloth frays very badly so it is best to just leave these and use wash rags for small jobs and the towels for big ones.
Note from Tawra: I keep a stack of old towels in my car and in my emergency shelter. Then if we are in an accident or tornado, someone gets hurt and there is a lot of blood we can clean it up easier. 

Cloth diapers and tea towels
Even though you can cut these, I usually don't. For example when I am washing windows, I use a corner to dry or shine and then move to another dry corner or the middle. By moving from one dry spot on the rag to the next, I can get a whole job done with one rag.

Pajamas
  1. Like the T shirts, I cut the sleeves first, long sleeves in half.
  2. Then cut side and shoulder seams.
  3. Cut off buttons to save.
  4. Cut the front band and collar off. Often the collar is big enough to save and use for a small wipe up job.
  5. Cut into squares or rectangles.
If I am going to use these for something like my Swiffer, I will measure and cut one for a pattern and use it as a guideline to cut more. Even these don't have to be perfect. It is just to give you a general idea.
Relax, you're just working with rags. If I have a drawer full of rags that are too big for the job at hand, I grab a pair of scissors and cut one down to the size I need. It is not big deal and it doesn't have to be perfect.
Don't feel guilty about throwing away rags.  I do it all the time and I do it guilt free. :) No wonder so many people are so stressed and uptight all the time. We can't even throw out a paper cup or use a piece of aluminum without being badgered or made to feel guilty. Rags are one thing you can throw out guilt free because, if you are like me, you have used it well in the form of clothing or linens and re-used it as a rag until it's pretty much worn out. Not only that, since I bought most of the things I wear used, my things have really been used by the time they hit the trash.

We all know that if we don't dry our clothes in the dryer we save on electricity, but many of us don't think about how the dryer reduces the life of our clothes. For a long time I couldn't understand why so many people were buying scads of socks and underwear for their families every few months. When my children were growing up, they almost never wore out their underwear and socks and we owned only about a quarter as many pair as most people do now. I didn't even buy expensive things. I bought the least expensive clothes I could find. So what was happening?

Fast forward a couple decades. One day after folding my grandson's new underwear, I noticed that the waistband was terribly rippled. After doing some research, I discovered the answer: The dryer was destroying the rubber elastic in the socks and underwear. I rarely dried my family's clothes in the dryer, so the elastic never broke down. It doesn't just happen with underwear - Have you ever noticed pilling (those little fabric balls) on your clothes and linens and the resulting lint in the dryer? That is the result of the fibers being rubbed thin. The dryer also shrinks clothes and sets in stains.

The two reasons I think most people don't line dry their clothes are that they think it is inconvenient or they're just not sure how to do it. Here are some of the best tips I have found to air dry clothes without a clothes line.

Though I don't use the dryer to dry my clothes, I do use it for about five minutes or so-- just long enough to fluff the clothes. I put one load in the dryer and only leave them there as long as it takes me to load the washer with the next load.

If you don't have a clothesline, you live in an apartment or your homeowners association won't allow clotheslines, here are a few ways to air dry clothes without a clothesline.

You need at least one drying rack and some type of clothes rod. You can buy drying racks at most discount stores or hardware stores. You might hang a clothes rod in your laundry room above the dryer, use a sturdy shower curtain rod in the bathroom or get a metal clothes racks that hooks over the back of a door. You don't need much. I can hang two loads of laundry on one drying rack and 2 feet of clothes rod.

Hang as many items as you can on clothes hangers, beginning with the obvious things like dresses, dress shirts and blouses and hang the hangers on a clothes rod to dry. Be sure not to put the hangers too close together so the air can circulate. You can also hang things like pajama tops, t-shirts, small kids shirts and one piece outfits. Lightweight pants, pajama bottoms, skirts and sweats can be pinned on clothes hangers and even sheets can be folded and hung on them. If you are really short of drying rack space, you can hang socks, underwear, wash rags, hand towels and towels on hangers and add them to your clothes rod, too. You are using the bottom part of the hanger as a rod.

Hanging Clothes on a Clothes Rack

When hanging clothes on a drying rack, I start at the bottom with socks and underwear, wash rags and baby clothes. Young children's clothes and hand towels go on the middle layer and the top rack is for towels, jeans, pillow cases, sweaters, sweats, pajama bottoms and t-shirts. I try to use every inch of space, so if I put a pillow case on the rack and there are a couple of inches left next to it I put a sock there. I even hook bras on the corners of the rack.

Drying racks are handy because they can be moved to speed up the drying process. Place them outside on a sunny (but not windy) day. Inside the house, try putting them over a vent and the heat or air conditioner will dry them faster. If you don't have central heat or air then you can place them in front of your heater or a fan. Don't place clothes close enough to heaters to be a fire hazard.

If you are short on space and don't want to look at a drying rack in the middle of the room, do the laundry before bed, hang it and in most cases it will be dry by morning (especially if you set it above an air vent).

Try hanging large king sized sheets or blankets over your shower rod, over the rail of your deck, between two lawn chairs or folded in half or quarters over your clothes rack. When you fold large items, you must flip and turn them every 5-10 hours so that each side gets dry.

Sometimes it is useful to hang a clothesline in the basement or attic. Be sure to check out your department stores and hardware stores for other ideas. They have many clever items like retractable clotheslines, things to hang over doors and some not so new ideas like extra large drying racks that can hold two loads of laundry each.

Even though this may sound complicated at first, once you do it a few times it becomes second nature to you. Pretty quickly, you will discover the most efficient way to hang your clothes on the rack. I know automatically that three wash rags fit across the bottom bar of my rack and the two socks will fit next the that particular t-shirt. It's like putting a puzzle together- the first time takes you longer than the times after that because you know where the pieces fit.

Muffins are very easy to make. Mix the liquid ingredients into the dry ingredients and hand stir lightly. Usually, you only need to stir them about 12-15 times. The batter will be very lumpy but that is the way it should be. Muffins are one thing you don't want to over-mix. Pour them into greased muffin cups about 2/3 full. If you don't have enough batter to fill all of the cups in the pan, you can fill the empty ones with water if you like. I do this sometimes but not always.
  • If you are adding nuts or fruit, mix them in with the dry ingredients before you add the liquids. This prevents them from all falling to the bottom of the muffin.
  • Your muffins should come out with rounded tops and a light fluffy texture. If they don't, there could be a couple of things you are doing wrong:
    • Flat heavy muffins with tunnels may mean your oven temperature is too low.
    • If the muffin has a lopsided or misshapen peak, the oven temperature could be too high.
    • Knobs and peaks on top and long tunnels can also be caused by over-mixing.

Here is a basic muffin mix recipe from Dining on A Dime:
Basic Muffins
2 cups flour
1/4 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 egg, beaten
1 cup milk
1/4 cup oil
Mix ingredients together. Spoon into greased muffin cups, 2/3 full. Bake at 400° for 20-25 minutes. Makes about 12-15 muffins.

Add these ingredients to a basic muffin mix to liven up your muffins:
  • Bacon or Ham - Reduce sugar to 2 Tbsp. and add 1/2 cup chopped bacon or ham
  • Blueberries - 1 cup
  • Cherries or cranberries - 2/3 cup of cherries or cranberries, mixed with 2 Tbsp. of sugar first
  • Dried fruit - 1/2 cup apricots, currants, peaches, figs, prunes, raisins or dates
  • Nuts - 1/3 cup chopped
  • Cheese - 1/2 cup grated cheese and 1/8 tsp. paprika
  • Cornmeal - 1 cup cornmeal and 1 cup flour
  • Whole wheat - 1 cup whole wheat flour and 1 cup flour. This is especially good with crumbled bacon.
    The sky is the limit with what you can add to a muffin if you only have a hand full of many different things. For example a little leftover corn would be good in a cornmeal muffin, a few chocolate chips would spruce up lots of different muffins, etc.

At this time of year, there are usually three things people are panicking about: how to lose weight, how to save money, and how to get organized. We have already touched on losing weight so this week I would like to touch on saving money.
Hopefully most of you realize that you can get into deep debt if you buy a house or a car you can't afford. That seems to be pretty obvious, although a lot of people do it anyway. But that is not what I want to deal with today. The Bible talks about the little foxes that spoil the vine. What that is talking about is the little things that sneak into our lives without us realizing it. They start picking away at the vines in our lives until it destroys us. One of those "little foxes" is eating out.
Eating out is among the of the top causes of personal debt. Most of us hunt for the best interest rates on our mortgages and we complain about the terrible price of gas the whole time we are pumping it.
Interestingly enough though, I have yet to hear one person groan about the awful prices they had to pay for lunch today or tell how they were "duped" into having to pay such high prices at their favorite restaurant. I mean really, the government should step in and make all restaurants take steak off of their menus so I won't be tempted to order it. Then there are those fast food places. They shouldn't be allowed to build so close to the road and make it so convenient for me to drive in there each day. They have a lot of nerve expecting me to be a responsible adult who knows what I can or can't afford and should or shouldn't do.
Tut, tut. I had better behave or I will have to fire myself. HA! HA! But I do feel so much better for getting that off of my chest.
Anyway where was I? Oh, yes -- saving money and eating out. I know most of the excuses we use to justify eating out when it doesn't really fit in the budget: "I don't have time", "I'm too busy", "I don't know how to cook", and last but not least, "it's so much easier to eat out".
I totally understand. I too don't have time to do things. I don't have time to take care of my yard, so I will hire a crew of gardeners to do it. I too don't have time to clean my house so I will have a housekeeper come in every day and do it for me. I don't know how to cook so I need a chef (the best French one, of course) and it is so much easier to hit my garage sales if I am chauffeur driven.
Obviously my examples are tongue in cheek but, as ridiculous as that all sounds, that really is what a lot of us are doing. In the same way that I can't afford a gardener, housekeeper or chauffeur and I would be pretty foolish to go hire them, many of us can't afford to go out to eat but do it anyway. I don't think most people really realize how much they spend eating out each month and would be shocked to find that they could probably hire a housekeeper or a gardener for that same amount.
Take one week and write down how much you spend eating out. That includes all those coffees, soft drinks, things from the vending machines and snacks you buy throughout the day. Be sure to write down the amount of anything that goes into you and your family's mouths for an average week. I'm afraid you may be unpleasantly surprised. Multiply it by 4 to get a monthly estimate and I think you would be just plain shocked.
I'm beginning to wonder if another reason we eat out so much is that it has just become a habit. Like many bad habits, we get so comfortable with them that we don't want to change them. Even when we know that a habit is destructive to us (physically, financially and even emotionally), we still do it.
Some of us look down our noses at other people with "bad habits" like drug addicts and alcoholics and can't understand why they don't just kick their habits. "Don't they see what they are doing to their families????"
What is the difference between other people's destructive habits and our repeatedly going out to eat and charging it? We know the food isn't as good for our families, we know we don't have the money to pay for it, and we know on bill paying day we will be so stressed that we will take it out on everyone around us. We so proudly display our bumper stickers that say "Say no to drugs." but how many of us could proudly display a bumper sticker that says "Say no to debt, I'm debt free".
(Please do not e-mail me about drug addicts and alcoholics. If you do, you are missing the point of the article and are only making it more clear to me that you are not willing to own up to or face the real issue --your debt.)
I know those words may sound harsh to some, but if you have seen and dealt with as many families as I have, whose homes have been or are being destroyed because of financial irresponsibility, you would understand why I can't always sugar coat things. We sink into a fog of apathy, hopelessness and discouragement and just give up trying. I really want you to understand you can fix your finances, but it will take a little bit of work and effort on your part. Don't just throw up your hands and give up.
There is a story in the Bible (John 5) that tells about a man who couldn't walk. He had laid by a healing pool for 38 years. If he could dip in the pool when the water stirred, he would be healed. Jesus asks him what he is doing there and he says "Well, I just don't have anyone who will carry me and put me in the pool" (Poor little old me.) Jesus then asks him, "Do you really want to get healed?" This might seem to us a strange question but, as I once heard a woman speaker point out, if he really wanted to get healed wouldn't he have tried some way to inch his way over to that pool even if he could only make it a half an inch a day no matter how hard it was?
Maybe Jesus asked this question because He too thought here is a man, like so many do these days, making excuses, being a victim and waiting for someone else to fix his problem for him. What did Jesus tell him to do? GET UP! (stand on your own two feet), TAKE UP YOUR BED (start being responsible for your own things), and WALK (become active in solving your own problems which may mean physical labor, or doing without some things).
You need to be like the lame man and GET UP, TAKE UP YOUR BED and WALK. If you know you are going out to eat too much then stop saying you're a victim of "these hard economic times". Be responsible for the "bed" (or the debts that you have now) and actively start doing something about it today. It isn't as hard as you think. I can take every excuse for eating out that I mentioned above and prove that they're not really valid.
"I don't have time." For the amount of time it takes you to drive to some place, wait for them to take your order and then wait for them to prepare your order, I can give you 10 menus or more that would take less time for you to prepare at home.
"I'm too busy." If you are too busy to take time to feed your family, something that is a necessity of life, then you are too busy. I have very rarely heard anyone say that they are too busy to get their hair done, go shopping, go to sports activities, talk on the phone or spend time on the computer. You really can find the time.
If I sound like I don't have patience with that excuse, it's because I don't. I was a single mom with 2 teens, working 60 -70 hours a week, doing all my own yard work, home repairs, and on and on and guess what? Except when I was ill, I always found time to make breakfast and dinner.
"I don't know how to cook." So learn. Start simple. Even my 9 year old grandson can boil himself a hot dog. You don't have to produce a gourmet meal to make your family happy and in most cases they would prefer you didn't. There are simple enough instructions on the back of a package of spaghetti noodles that, once again, even a child can read and follow. Warm up a jar of sauce and dinner is served. You now have two main dishes that take less than 10 minutes to prepare.
I understand that man can't live on hot dogs alone (although I think kids can), but don't worry -- after a week or two of simple dishes, you can move on to more complicated things like frozen French fries and frying hamburgers ;-) Plus if you really get stuck, I just happen to know of this really good cookbook called Dining on A Dime that can help you. ;-)
"It's so much easier." I guess that depends on your definition of easy. To me, going to a restaurant, sitting and listening to loud music for 30 minutes with fussy, hungry, complaining kids is not my idea of fun. Going to a drive-thru is, at times, not much better. Lately it seems as if the line of cars wraps around the whole building at every fast food joint that I drive by. I was amazed to see every restaurant's parking lot jam packed two days after Christmas. (Must be that all those people who couldn't afford Christmas had gotten a windfall.) Sorry, once again I digress.
You may say "The restaurant where I go isn't that bad." but my point is that everything has it's drawbacks, whether you stay at home to eat or go out to eat. It's just a matter of what you make up your mind to put up with. Do you want the pain of cooking or the pain of not knowing how to pay your bills.
If you are in debt, it would be wise to start putting up with a few of the drawbacks that come with eating at home. Besides, if you are really serious about saving money, there are ways to make cooking at home much easier.
  1. You can use convenience foods. There is nothing wrong with buying things like French bread, canned biscuits or bagged salad. Line the pans you use with foil, or use disposable pans. It's cheaper in the long run to use these than going out to eat.
  2. Clean up as you cook. This is very important because I notice a lot of people make a bigger mess than necessary when they cook.
    • Instead of messing up the whole stove by repeatedly laying a sticky spoon on it, use a spoon holder or cup. It is a simple thing that makes clean up so much easier.
    • Keep some hot soapy water in the sink while you are cooking and wash things as you finish with them.
    • Don't set that carton of milk down on the counter after you pour it. While it's still in your hand, put it back in the fridge.
    • Keep the number of utensils you use to a minimum. You don't need to put a lid on a pot every time you cook something.

  3. Don't always think gourmet. Most families are so excited to get a homemade meal that they don't care what you serve them. Besides, almost any meal can be made to look "gourmet". Fruit sliced and arranged nicely on a plate, muffins keeping warm and nestled in a napkin inside a basket or mashed potatoes piled high with a chunk of golden butter melting down the sides all have eye appeal. All right -- I made myself hungry! Maybe it's time to quit for lunch.
  4. Clean up is one of the main reasons people hate to eat at home, but if you clean as you go like I mentioned earlier and everyone pitches in to help clean up after dinner, it should only take about 15 minutes to get it all put away. It would take longer than that to drive to a fast food place and return home.
  5. Pull out those crockpots. It takes about 5 minutes to throw in a roast, potatoes and carrots. It takes the same amount of time to throw in the ingredients for chili, stew or vegetable soup.
  6. If you are dragging the kids to an after school game: Instead of going to a fast food drive in, throw some hot dogs in a thermos and cover with boiling water. They will be cooked and ready to eat by the time you get there. How long does it really take to grab a few pieces of fruit, a bag of cleaned veggies and some chips to go with them? Maybe 2 minutes? How hard is that to cook? You could also have sloppy joes simmering in a crockpot and pour those into the thermos for an on the run meal. To make it even easier, heat it up from a jar and then pour it in the thermos.
I don't know who set the standard that cooking a meal in 30 minutes is fast. If I took that long to cook a meal every night I would never get anything done. There are tons of meals out there that require 15 minutes or less prep time.
