RECIPE: BEEF AND BEANS
A friend introduced me to THE CROCKPOT BLOG just today and now there is a stove-top version of this recipe simmering on the stove. It smells absolutely WONDERFUL!!! (We don't eat much beef around here, so on the rare occasions that we do get it, it's a real treat!!!)
BEEF AND BEANS
1 1/2 lbs of stewing beef 1 tbsp. prepared mustard 1 tbsp. taco seasoning 1/2 tsp. salt 1/4 tsp. pepper 2 garlic cloves minced 1 can 16 oz diced tomatoes, undrained 1 med. onion chopped 1 can Kidney beans rinsed and drained 1 can chili beans 1 can of black beans – optional
Combine mustard, taco seasonings, salt , pepper and garlic in a large bowl. Add beef and toss to coat! Place the beef in a large (6 qt.) crock pot and add the rest of the ingredients. Cover and cook for 6 -8 hours on low. Serve over hot rice.
