Happy Homemaker Monday - October 21, 2019

I trust that you and yours had a lovely week and weekend. Ours was good here and extremely blessed!

Tuesday was spent cooking, baking, and preparing for library programs on Wednesday. I also got together with my BFFF on Tuesday afternoon to celebrate her birthday

The Spider Web Pretzel Treats Made 
For Wednesday's Library Programs
I worked Wednesday, Friday, and Saturday. 

Wednesday evening we attended a wedding vow renewal ceremony and Saturday evening we met our children and grands at the corn maze for an evening of fun and fellowship as a family. It was a lot of fun and we had a great time! 🌽

On Thursday I took grandson, T.J. out to lunch and ice cream for his birthday. While there we visited Miners Memorial Park in Pittsburg, Kansas. Being as my grandfather and father-in-law were both coal miners I found it very interesting and quite sobering.

Okay...so...enough about last week! Let's get started on this week, shall we?

... finishing up breakfast and enjoying a cup of hot tea while I work on this post. 

On the breakfast plate...


... fat-free turkey slices, Laughing Cow cheese wedge, and egg on toast with a cup of Pumpkin Spice tea.

The weather...

... Yesterday was gorgeous...75 degrees and sunny. Then, a cold front pushed through last night and we had severe storms and was under a tornado watch until 5:00 this morning. At present it is 49 degrees and sunny and the week ahead doesn't look bad at all.

On the menu this week...

Monday - Beef stew, baked butternut squash, and homemade bread
Tuesday - Chili and fried apples
Wednesday - Turkey and wild rice soup with homemade bread
Thursday - Meatloaf, oven roasted vegetables, and homemade bread
Friday - Broiled salmon fillets, baked sweet potatoes, and green beans
Saturday - Dh's night to cook
Sunday - Leftovers

Have shared it before, but am sharing the recipe for my favorite autumn muffins again! 

Pumpkin Streusel Muffins

PUMPKIN STREUSEL MUFFINS

1 3/4 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1  teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 egg
1/2 cup milk
1/2 cup canned pumpkin
1/3 cup oil
1 package (3 ounces) cream cheese cut into 12 cubes

    Streusel:

1/4 cup packed brown sugar
1/4 cup chopped pecans
1 teaspoon ground cinnamon
1 tablespoon cold butter or margarine

In a bowl, combine the first six ingredients. In another bowl, beat the egg; add milk, pumpkin and  oil. Stir into dry ingredients just until moistened. 

Fill 12 greased or paper-lined muffin cups half full. Place a cream cheese cube in the center of each. Top with remaining batter. 

For the streusel, combine brown sugar, pecans and cinnamon in a small bowl. Cut in butter until crumbly. Sprinkle over batter. 

Bake at 400 degrees for 18-22 minutes or until muffins test done. Cool for  5 minutes before  removing from pan to wire rack. 

Yield:  1 dozen.

- Monday - HHM post, weekly home blessing, laundry, plan the week ahead, bake bread, take car to the auto mechanic for its annual check-up; pack up summer clothes and exchange for winter
- Tuesday - Work (bison auction)
- Wednesday - Take a friend to her hair appointment
- Thursday - Pick up my car from the auto mechanic; take a family member grocery shopping
- Friday - Work
- Saturday - Work 
(nature bingo)
- Sunday - Church, work in the afternoon (the last Sunday of our summer season; won't have anymore until April! YEAH!!!) 😄

In the craft basket...

... Just trying to keep up with the temperature afghan. Ran out of gold thread and had to order more. Am waiting for it to arrive so I can continue.

    1. Thanks, Becki! The spider web pretzels ARE fun! Fun to make and fun for the children to eat...as long as they don't eat the plastic spider! :O LOL! Yes, I have a friend and a daughter that are both making one and, you're right, so different! Have a blessed week ahead! :)

  2. Rebecca, I can't wait to get my planner. I am a hot mess today, and my computer area has sticky notes all over the place. Ha ha! We didn't do the maze at our pumpkin farm trip, but did the hayride, and the grandkids played in a sandbox filled with corn, and climbed straw bales etc. Your menu sounds fabulous too. Have a fantastic week. Oh, I love those spider treats! So adorable.

    1. I mailed it out on Thursday, so it should be arriving anytime. I did send it media mail though so it might take an extra day or two. In addition to the corn maze, we did the hayride, too, and the little ones enjoyed the corn crib and hay maze. I love fall so much! Have a great week ahead, Kristina, and enjoy the planner! <3

    How fun you did a corn maze! We haven't done one of those in forever. And that muffin recipe sounds amazing - I'm going to adopt that one. 😋 The spider web pretzels are adorable! May need to copy them sometime too. Lol
