Recipe: Broccoli, Cheese, and Rice Casserole

A friend is looking for a broccoli, cheese, and rice casserole recipe to make for Thanksgiving. I told her I'd share mine when I got home from work. Since I was going to type it up anyway, I thought I'd go ahead and share it here in case anyone else would like to have it, too!

BROCCOLI, CHEESE, AND RICE CASSEROLE

2 packages frozen broccoli florets
1 cup uncooked Minute Rice
1 can cream of chicken soup
1 onion, chopped
2 tablespoons butter
1 cup shredded cheddar cheese
1/2 cup milk

Cook broccoli as directed; drain. Saute' onion in butter. Mix all ingredients together and spread in casserole dish that has been sprayed with pan spray. Bake 35 minutes at 350 degrees.

  1. If I wanted to make that and had no recipe, I would make a casserole that left out the chicken. Tommy hates cheese on his rice and chicken, so I have to stir cheese into what I put on my plate. booo to that. Last time, I made two small casseroles, one for each of us. That looks good. I may make that myself since I just bought fresh broccoli.

    1. It is good, Linda! If you end up trying it, let me know. I'd love to hear your opinion. Sometimes, instead of two packages of broccoli, I only use one package of broccoli and one of cauliflower. That's good, too! Have a Happy Thanksgiving!
