I usually don't buy buttermilk, but did this week to use in another recipe. I wasn't sure what to do with the leftover buttermilk so I used it to make these extra fluffy and super delicous buttermilk pancakes. Thought I'd share the recipe here with you! 🥞 BUTTERMILK PANCAKES 2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 tablespoons sugar 2 cups buttermilk 2 eggs 1 teaspoon vanilla Whisk all ingredients together and pour by scant 1/4 cupfuls on hot griddle that has been sprayed with cooking spray. Cook pancakes on one side until golden brown, then turn and cook on the other side until golden brown and done in the middle. Makes 24 pancakes. It's Tuesday and it's time for Tuesday 4! Here are Annie's questions for Week 2 of 2020... 1. Where have you traveled and what is the furthest you've been from home? I live in southwest Missouri. I've traveled as far north as the Candian border, south as far as the Gulf of Mexico (North Padre Island), west as far as the Rocky Mountains, and east...only as far as Alton, Illinois. 2. Is there a location other than where you are, that you think would be a nice place to live? Northern Minnesota and Cody, Wyoming 3. Do you have a photo or story from a favorite place to visit? Ely, Minnesota is my second home. From the time I was 7-years-old, on up until I was well into my 20's,my parents and I would vacation there once...sometimes twice...a year.
Shagawa Lake is the lake I 'grew up' on. The little white cabin, there in the background, that overlooks the lake, is the cabin that our family most generally stayed in while vacationing there.
My dad enjoyed fishing on the lakes and would catch, and freeze, enough northern pike and walleye to last us from one year to the next. My mother and I would spend our days visiting local places of interest and exploring the vast beauty of Superior National Forest.

Many happy memories occurred on our trips to Ely. It was there that I saw my first black bear in the wild (a mama bear with twin cubs crossing Number 1 Highway on our way to Duluth), saw my first moose (a mama with twin calves down in a swamp along Fernberg Road), saw my first wolf, my first porcupine, and my first grouse, fed chipmunks out of my hand, listened to the chilling and, sometimes, crazy calls of the common loon, heard the call of a lone wolf, and picked daisies to wear in my hair.

4. What dream destination do you have tucked away in your heart? Do you think you'll be able to visit them one day or are plans in the making?
Someday I would like to visit Tennesee, Kentucky, and North Carolina. I want to visit the Shenendoah Valley, visit the graves of my Revolutionary War hero granddaddies, and see the Atlantic Ocean. Do I think I'll do it? Yes, I think I will...someday. 💗

Greetings, Dear Ones! I hope you had a nice weekend and that your week is off to a great start! Happy Monday! 💗 Things are about the same here. We are on Day 20 without hot water. After replacing three different parts the company has finally agreed that, yes, we need a new hot water heater, which they approved last Tuesday, but it's not a model that the local building supply that we bought it from keeps in stock (it's a real odd-ball...a 29-gallon liquid propane). It had to be ordered in from a place in Illinois and should be on the truck tonight. If all goes well we should be back in business sometime tomorrow. What a blessing it will be to have hot water again! I have considered this a lesson in patience and hot water is not something that I will take for granted again. Wednesday evening my husband and I enjoyed a game night...checkers (his favorite), Chinese checkers (my favorite), popcorn, and hot chocolate. It was a lot of fun and we decided that this is something we need to do more often! 😊

Okay...enough about last week. Let's get right on into this week's post, shall we? And, by the way, I think I've missed the point and mixed up and even eliminated some of Sandra's categories in the past. I'm going to try my best to stay on course with her 2020 line-up!
...we had storms over the weekend...heavy rain and thunderstorms on Friday; ice, sleet, and snow on Saturday. In fact, the nature center was closed Saturday due to the weather, so I got to stay in and watch the birds at the feeders, which is something that I really enjoy doing.

... getting up, getting out, and getting started! Since we had the storms over the weekend and the roads were iffy, we decided to relax and just flip our Sunday/Monday routines. I cleaned house, did laundry, and planned the week ahead yesterday; today our plan is to go to the nursing home to visit Pat, then do our grocery shopping and visit the kiddos in Lamar on our way home (this has become our new Sunday after-church norm since Pat's been in the nursing home). We plan on dropping off donations at the second-hand shop, having lunch out, and doing a few other errands while we are out and about.

...we haven't done tv here since 2013, but we do listen to cd's, the radio (VCY America), and watch movies and other programs on the computer.
This week we enjoyed the latest episode of the Wild Brothers' Highlands to Island Vlog (Episode 30 - Beach Cleanup on Bat Island) and the movie Beyond the Mask starring Andrew Cheney, John Rhys-Davies, and Kara Killmer.
On the menu this week...
Monday - Turkey breast fillets, baked potatoes with cottage cheese, leftover cabbage, carrots, and celery sauteed together in a vegetable medley
Tuesday - Stuffed pepper casserole and salad
Wednesday - Bison chili, crackers, and salad
Thursday - Roasted chicken breast, baked potato with cottage cheese, and mixed vegetables
Friday - Salmon, baked sweet potatoes, and brussel sprouts
Saturday - Tortellini, sauce, salad, and homemade bread

Looking around the house... ...we had to move the cabinet out of the bathroom in preparation to take out the old hot water and get the new one in, so things are a bit in disarray in the hallway. Other than that, things are in pretty good shape.
Chore I'm not looking forward to today or this week... ...can't think of anything.
To relax this week, I will... ...drink tea, walk, read, enjoy a date night with my dh, and finish the 2019 temperature aghan after the skein of yarn that I ordered arrives. I got down to the last few rows and discovered that I didn't have the extra skein of Forest Green Heather that I thought I had. 😕
On my prayer list...
- President Trump, Vice-President Pence, all elected officials and their families in every arena from the federal to the local level in every town, city, county, and state, and our nation as a whole - For a great awakening within our nation as took place in the mid-1700's, again in the early 1800's, and again in the late 1800's...early 1900's. It's time! - Friends and family members that are under attack and in need of health and healing, be it physical, mental, emotional, spiritual, or financial. There are so many!

Hospitality is something that I used to practice regularly, but not so much here lately. Practicing hospitality is something that I hope to work on in 2020.

I've been super out of the Tuesday 4 loop for quite some time now (October 10, 2019 was my last entry), so...I'm not sure what happened to Toni, but I'm glad that Annie is carrying on what Toni began. 1. Do you have pets ? What kind of pets do you have? Photos? Our 18-year-old dog, Shep, passed away in 2017 and our 19-year-old cat, Stripes, passed away in 2019, so now we are down to one pet...a tarantula named Clementine.

We inherited Clementine about a year and a half ago from friends who were returning to their native Brazil and could not take her with them. I could never imagine myself having a tarantula in my home, but Clementine has really grown on my husband and I and I'm afraid that we actually love her.
2. Do you have a weekly menu you plan out? Would you share it with us, or perhaps a short list of meals you make often? It gives other people ideas! Yes, I try to make out a weekly menu plan and it is typically listed in my Happy Homemaker Monday posts on my blog. Here is this week's plan... Monday - Chicken soft tacos
Tuesday - Chicken and wild rice soup with homemade bread
Wednesday - Black-eyed peas, ham, and cornbread
Thursday - Oven-roasted chicken breasts, baked potatoes, and oven-roasted carrots
Friday - Broiled salmon, baked sweet potatoes, and fried cabbage
Saturday - Hot pork sandwiches with mashed potatoes and fried cabbage Sunday - Leftovers
3.Where do you do your grocery shopping? Do you like that store or do you go to others to fill in the gaps?
We are 20 miles from the nearest grocery store, so trips have to be planned carefully and I fill in the gaps wherever I can. I prefer to shop at Aldi's first, then finish up at Walmart or other stores that happen to be in the area in which we find ourselves for whatever reason (doctor appointments, coming home from visiting our daughter in Kansas City, etc).
4. What kind of house do you live in or is it an apartment. Describe it. What changes would you make to it if you could?
We live in the house that my dad built himself back in 1995. It is small (one bedroom, one bath, office, kitchen, and livingroom), rather rustic, and not fancy at all, but is energy efficient and suits our needs quite well.
If I could make changes I would put on a new roof and new front porch, and lay new flooring in the kitchen, hallway, and bathroom.

Here things have been going along. We got the tire fixed on the van, but we are still without hot water (have been since Christmas morning). The thermocouple has been replaced, as has the gas valve; now we are waiting on the company to send another part. They assured me that this is the only part left that it CAN be. I'm like...how many parts are you going to send before just replacing the hot water heater??? 😕
I did manage to get the Christmas decorations down, organized, and packed away for another year and I got a great deal on some after-Christmas sales. I've got all of my cookie tins for next year, plus hot cocoa mugs, wrapping paper, bows, name tags, and more...all for 50 to 70% off. I am extremely pleased with my purchases! 😄

I worked Wednesday, Friday and Saturday and on Thursday I took grandson, Silas, out to lunch for his birthday (which was a day early); we were invited over to the house Friday night for supper and to celebrate his birthday with the family. 🎂
