First Day of Winter

I had planned on writing a post this morning, but, got busy and the day got away from me. The hour is late, but it's still the first day of winter. Happy Winter Solstice! 



I spent yesterday cleaning up after baking, packaging, and delivering approximately 35 dozen cookies on Monday and doing laundry.  The kitchen was my biggest mess. Usually, I clean up as I go along, or, at least, before going to bed, but that night I was so tired that I just couldn't. Flour, sugar, molasses, and other sticky ingredients were everywhere!

Today Carla and I had a nice visit after having lunch at Mary's. The afternoon and evening were spent making the filling and putting together the Christmas Eve lasagnas. The baking dishes are full, wrapped, and sitting in the fridge, allowing the flavors to meld, while they wait to be baked.

Now, it's nearly midnight and, if I don't get this post out soon, the first day of winter will be over. I'll talk to you again soon! Good night! 💗

Recipe - Wintery Day Bean Soup

A delicious meal-in-a-bowl.


WINTERY DAY BEAN SOUP

1 tablespoon salt
Water to cover
2 quarts fresh water
2 cups ham or smoked sausage, diced or sliced into 1-inch pieces (I used leftover pulled pork from the freezer)
1 onion, chopped
1 clove garlic, minced
1 teaspoon chili powder
1 can (28 oz.) tomatoes
1 tablespoon lemon juice
Salt and pepper to taste

Rinse beans and place in a large kettle with salt and enough water to cover beans. Soak beans overnight. Drain and replace in kettle. Add fresh water and ham or sausage (or meat of choice). Simmer for 2 1/2 to 3 hours. Add onion, garlic, chili powder, tomatoes, and lemon juice. Simmer for 45 minutes. Add salt and pepper to taste. Serve hot with crackers or corn bread.

Dry Beans - Useful Hints and Tips and A Basic Dry Bean Mix

I've always liked beans and have several go-to recipes when I'm in the mood for them, but, for the purpose of economy, I plan to incorporate them a lot more in the days ahead. 



Below is a list of useful hints and tips when it comes to cooking with dry beans and a recipe for a Basic Dry Bean Mix.

- 1 cup of dried beans yields 2 1/2 cups cooked beans.

- Cooked beans and bean dishes freeze well and can be made ahead of time at your convenience.

- Cover beans with water to which 1 tablespoon of baking soda or salt has been added; soak overnight. This seems to eliminate some of the gas that beans tend to create in our systems. Soaking the beans also helps tenderize them. Pour off soaking water and rinse beans before adding the cooking water, unless otherwise stated in the recipe. 

- If you don't have time, or forget to soak the beans overnight, a quick way to tenderize them is to cover them with water to which 1 tablespoon of salt ha been added, bring to a boil and simmer for 1 to 2 hours before using them in a recipe.

- Most bean dishes may be cooked longer than stated in the recipe. 

- Reheating bean dishes enhances the flavor.

- Store beans in a cool, dry place in a tightly covered container to keep them from becoming too dry and hard. 

- Cooking time will vary depending upon the type and age of the bean being used and the hardness of the water.

- A small amount of butter or oil added to the beans during cooking time will keep down foam.

- Acids, such as tomatoes, should be added after the beans have cooked and are rather soft.

- If you are not used to eating a diet high in beans take it low and easy. Increase your intake a little at a time to help your intestinal tract adjust. Otherwise, you may experience the discomfort of bloating and gas. 


BASIC DRY BEAN MIX

I plan on using this bean mix a lot this winter and will be referring back to this post when sharing recipes that use them.


1/3 cup of each bean = 4 cups already mixed

- Black beans
- Navy beans
- Red kidney beans
- Baby lima beans
- Pinto beans
- Lentils
- Pearl barley
- Black-eyed peas
- Split peas, both green and yellow

The original recipe also called for soy beans, chick peas, and whole green peas, none of which I had on hand, so I just added extra beans of the ones I had the most of in the list above.

Buy packages of these beans, usually in the smaller bags, and just mix them altogether, storing them in a large container. Don't bother measuring each type of bean for the mix. The packages are of different ounce sizes, so just open them up and mix. This gives a different variety and is always good and always ready to use.

If you prefer, already mixed beans may be purchased in many grocery and bulk food stores, as well.

Winter Bucket List 2021 Update

Between political upheaval, COVID-19, inclement weather, and record cold temperatures that plunged our nation into the deep-freeze, Winter 2021 turned out to be a hard one for many and, personally, I'm glad it's over! I've never looked forward to spring more than I have this year!

We didn't get to do a lot of the things on the list this year and, even those that we did do, we didn't do justice to or do them as we normally would, but I will update as best I can as follows...

Things that were accomplished will be crossed through like this and any notes that I want to add will be found in parenthesis and in bold type (like this).


My Winter Bucket List 2021

1. Write my winter bucket list
2. Plan my winter menus (this will be done weekly through my  'Master List and Menu Plan Monday' posts) 
3. 
Celebrate the Christmas season with family and friends 🎄


4. Ring in the New Year with family and friends 🎉
6. Celebrate winter birthdays with the grandlittles 🎂
7. Go stargazing (don't forget the warm blanket and hot tea!) 🌠
8. Celebrate Valentine's Day 💘


9. Go out of town or do something special to celebrate John and I's 33rd wedding anniversary 💞

(Due to the fact that we were both still recovering from COVID and he had just gotten out of the hospital, we didn't do a whole lot. Each of our children did something to make it special though and we did go out to breakfast one morning on a gift certificate that we received, but we still hope to make that out of town trip sometime soon.)


10. Hang a new bird feeder 🐦
11. Invite family and friends for soup and bread 🥣🥖
12. Drink hot cocoa ☕
13. Have a movie marathon 🎥
14. Play in the snow ⛄

I couldn't resist slipping out in my robe and clogs
to see just out deep it was at that point!  

This was the deepest snow we've seen since moving to 
Southwest Missouri nearly a quarter of a century ago.

15. Make peanut butter pinecones for the birds. 🥜
16. Work a jigsaw puzzle 🧩


(I've worked several puzzles over the winter, but this is the latest one and one of my favorites.)

17. Catch a snowflake on my tongue ❆
18. Spend a night in a cozy cabin 
19. Throw a snowball ⛄
20. Make chili 🥣
21. Watch and photograph winter birds at the feeders 🐦


22. Drink hot tea ☕
23. Cut out paper snowflakes ❅
24. View a frosty-backed bison 🐂
25. Host a winter pizza party (February 9th is National Pizza Day) 🍕
26. Start a nature writing project 🐾
27. Enjoy a full moon on a snowy night 🌕
28. Host a coloring contest for the grandlittles ✎
29. Make snow ice cream 🍨
30. Follow a favorite musher or two in the 2021 Iditarod 🐺
31. Take a winter hike 🥾


32. Break icicles off the edge of the roof 🧊



33. Plan the 2021 vegetable garden (order seeds early!) 🌱
34. Shampoo carpets 
35. Celebrate St. Patrick's Day with family and friends 🍀

Welcome Spring and Winter Bucket List End-of-Season Update

Greetings, Dear Readers! 💗

What a thrill it is to officially say good-bye to winter and hello to the long-awaited spring! 🌷🍀🌹🌼🌸

My heart goes out to all those folks in Nebraska, Iowa, and northern Missouri that are dealing with record flooding right now and, along with it, the loss of homes, livestock, and livelihood. Then, there are those further to the north and west that are dealing with the devastating effects of recent blizzards. What a wild winter it's been and, unfortunately, in some areas of our nation, it's not over yet. To those that are in the effected areas, our thoughts and prayers are with you and will continue to be in the days ahead. 🙏

In comparison to the weightiness of all that, my measly little winter bucket list seems frivolous and unimportant, but it is what it is and it's what I wrote, so I will update as follows...

(This works really well for me. By keeping track of weekly menu plans in the HHM posts, I stay on track with them about 90% of the time.)

making a special dinner and enjoying an evening at home.
10. Hang a new bird feeder

Received this beautiful bird feeder as a Christmas gift!
11. Deep-clean the kitchen

(Perhaps I will do this as part of spring cleaning? We'll see!) 😏

15. Watch 'Little House on the Prairie' - Seasons 1 through 9

(Yes, I, actually watched all nine seasons over the course of the winter and enjoyed every single episode! 😊 I hadn't seen most of them for more than a quarter century!) 😲

(I can't get this one done until I get my Rug Doctor fixed...which I plan on doing on my next trip to Joplin. A word of warning to anyone who is thinking of purchasing one...they work great, but, apparently, they are notorious for vibrating so hard that it breaks the housing on the motor. The repairman that I talked to said that it is a common problem.) 😞

Winter 2019 Bucket List

Autumn is over, it's late January, winter solstice occurred over a month ago, and I'm just now getting around to sharing the list of things that I'd like experience and accomplish over the winter season. Some of them have already happened and I know that, in reality, I probably won't get to all of the things on the list, but just having it will help me to focus on what's left of the season.
